Cranberry Brie Bites
Ingredients:
- 8 oz. brie cheese, cut in 24 small squares
- 1 cup whole cranberry sauce
- fresh rosemary sprig
- 1 package refrigerated crescent rolls
Assembly instructions:
- Roll out dough. Cut into 24 squares. Put each square in a silicone mini muffin tin tray. Add a square of brie. Top with a spoonful of cranberry sauce and add a small bit of rosemary.
- Put the muffin tin tray on a cookie sheet and freeze flat. Pop the bites out when frozen. Transfer to a large resealable freezer bag. Remove excess air, seal, and freeze.

Cooking instructions:
- Put the frozen bites back into the mini muffin tin tray. Bake in a 375° oven for 15 minutes until edges are golden brown. Serve.

Are there other cheeses I can use besides brie? While brie is our go-to for this recipe thanks to its creamy texture and rich taste, camembert would be our second choice. It has a stronger, earthier flavour, but still melts into ooey-gooey goodness (which is essential in these Cranberry Brie Bites!).
What type of cranberry sauce is best to use? Using whole cranberry sauce adds texture to this appetizer because the sauce has actual cranberries within it. It also maintains a more similar taste to fresh cranberries which nicely complements the savoury cheese and rosemary earthiness. Jellied cranberry sauce can be used in a pinch, but it wouldn’t be our first choice.
Can I use dried rosemary for this recipe instead of fresh? We wouldn’t recommend dried rosemary for this appetizer, because the leaves will remain woody and unchewable, even after cooking. Fresh rosemary, on the other hand, delivers the same great flavour (if not better!) and an enjoyable mouthfeel.
What’s the best way to serve these Cranberry Brie Bites? These tasty bites are a great addition to any potluck or shared appetizers meal. They also work very well alongside a charcuterie board or glass of your favourite holiday drink for a games night or other fun gathering.
