Goat Cheese Pistachio Stuffed Dates Recipe
Ingredients:
- 24 large dried Medjool dates pitted
- 8 oz. goat cheese
- 1/4 cup pistachios, finely chopped
Assembly instructions:
- Make a lengthwise slit in the date or find the slit previously made from the pitting process.
- Open slightly and stuff with goat cheese using a spoon.
- Roll in crushed pistachios.
- Place in a freezer bag.

Cooking instructions:
- Thaw slightly before serving.

What are Mejool Dates?
If you are unfamiliar with Mejool dates, they are larger and sweeter than typical dates. This makes them ideal for stuffing and using for appetizers like this one. You can find them in most grocery stores in the produce or dried food section. Many bulk food stores also carry them.

What to Serve with This Recipe
These are great to have on hand to include in a charcuterie platter or any type of appetizer platter. You can include sliced pears, apples, or figs for extra sweetness. They would also pair well with prosciutto or other thinly sliced cured meats, marinated olives, or an antipasto platter.
