Hawaiian Huli Huli Chicken Recipe

Ingredients:

  • 10 chicken thighs, boneless, skinless
  • 4 cloves of garlic, minced
  • 1/2 cup brown sugar
  • 1/2 cup ketchup
  • 1 cup pineapple juice, store-bought
  • 1 tsp. fresh ginger minced
  • 1/3 cup low-sodium soy sauce
  • 2 Tbsp. Worcestershire sauce
  • 2 Tbsp. apple cider vinegar
  • 1 tsp. smoked paprika
  • 1/2 tsp. pepper

Day of Cooking:

  • Grilled pineapple slices

Assembly instructions:

  1. Place chicken in a large resealable freezer bag.
  2. In a small bowl, mix remaining ingredients.
  3. Stir to mix.
  4. Put 1/2 cup of the mixture in a medium bag.
  5. Pour the remaining marinade over the chicken.
  6. Squish to combine.
  7. Remove excess air, seal, and staple the medium bag above the seal. Then, freeze.

Cooking instructions:

  1. Thaw.
  2. BBQ: Grill for 6 minutes on one side, flip, and cook 4 minutes on the other side. Baste with sauce and cook another 1-2 minutes per side.
  3. Oven: Bake @375° for 30-35 minutes. Then brush with marinade and broil for 2-3 minutes.
  4. Serve with grilled pineapple slices.

What to Serve With This Recipe

This dish pairs nicely with coconut rice or jasmine or basmati rice to help soak up the delicious flavor from the sauce. You can also pair it with grilled pineapple slices, a mango salsa, a baked sweet potato, or Hawaiian rolls.
