This freezer-friendly Spicy BBQ Chicken meal packs a lot of flavour and comes together in less than 10 minutes. With minimal chopping and very few dishes, this quick and easy recipe is sure to become a favourite for potlucks, get-togethers, and family meals.

Spicy BBQ Chicken
Ingredients:
- 10 chicken thighs, boneless, skinless
- 2 cups BBQ sauce
- 2 tsp. cayenne pepper
- 3 cloves garlic
- 1/2 onion
- 1 Tbsp. apple cider vinegar
- 1 Tbsp. brown sugar
- pinch of pepper
Assembly instructions:
- Add all ingredients to a large freezer bag. Squish gently to combine. Remove the excess air, seal, and freeze.

Cooking instructions:
- Thaw. Cook on low for 4-5 hours or on high for 2-3 hours or until chicken has reached an internal temperature of 165°.
- Or cook in instant pot on high pressure for 8 minutes with a quick release.
- Shred. Serve on buns with coleslaw and sliced dill pickles.

Our favourite way to enjoy this tender, flavourful chicken is inside of a soft white bun, on top of a bed of coleslaw. And you can’t forget the sliced dill pickles for that extra touch of sharp, salty crunch. Simple sliced veggies pair very well with the Spicy BBQ Chicken sandwich, as well as our Twice Baked Potatoes.

Chicken thighs vs chicken breasts:
Because they are fattier, chicken thighs are more flavourful than their leaner counterparts, chicken breasts. We prefer them in this recipe because they shred nicely, taste a touch better, and help make this dish even more filling. But, if you’re looking for a leaner, healthier option, you can easily swap chicken breasts in their place.
Adjusting spiciness of this recipe:
If you love recipes that pack some heat, the recommended 2 tsp. of cayenne pepper will be right up your alley; it makes this dinner nice and spicy. But if a mild kick is more your cup of tea, feel free to adjust accordingly, putting in anywhere from a 1/8 tsp – 1 and 1/2 tsp.
