Crockpot Tuscan Chicken Tortellini

Ingredients:

  • 3 chicken breasts, boneless, skinless raw, cubed
  • 3 tsp. Italian seasoning
  • 1 cup sundried tomatoes, sliced
  • 3 clove garlic, minced
  • 4 cups chicken broth
  • 12 oz. cream cheese, cubed
  • 1 cup Parmesan cheese, shredded
  • 1.6 lb. cheese tortellini

For day of cooking:

  • 1 cup fresh spinach, chopped

Assembly instructions:

  1. Place cubed cream cheese, Parmesan cheese and tortellini in a large freezer bag.
  2. Put the remaining ingredients in a second freezer bag. Mix gently to combine.
  3. Remove excess air from both bags, seal them and staple above the seal. Freeze.

Cooking instructions:

  1. Thaw. Empty the bag with the chicken into a slow cooker and cook on high for 2 hours.
  2. Stir in tortellini bag contents and 1 cup chopped, fresh spinach and cook for another 30 minutes.
