Gochujang Cauliflower

Gochujang Cauliflower is a simple recipe that will spice up this vegetable side dish. This is not your typical shy cauliflower side. It is packed with spicy, savoury flavour and might just steal the spotlight. Perfect as a side or appetizer, this dish is a quick and easy way to enjoy your veggies.

Korean inspired cauliflower dishes are right now a trendy appetizer in many popular restaurants so I decided to invent my own freeze-ahead version.

Gochujang Cauliflower Bites

Ingredients:

  • 1 cauliflower head, cut into florets
  • 2 Tbsp Gochujang paste
  • 2 Tbsp maple syrup
  • 2 Tbsp low sodium soy sauce
  • 2 Tbsp apple cider vinegar
  • 2 clove garlic, minced
  • 1 tsp. fresh ginger, minced
  • salt to taste
  • pepper to taste

Day of serving:

  • green onions sliced, for day of cooking

Assembly Instructions:

  1. Add all ingredients to a large resealable freezer bag and shake to coat cauliflower.
  2. Remove excess air, seal, and freeze.

Cooking Instructions:

  1. Thaw. Bake in 350° oven on a baking sheet for 20 minutes, stirring once or twice. Or Air Fryer 400° for 10-12 minutes, shaking often.
  2. Sprinkle with sliced green onion and serve.

What is Gochujang paste?

Gochujang paste is a Korean condiment that is made from red chili powder (gochugaru), glutinous rice, fermented soybeans, and salt. It is a thick, deeply red paste that is a staple in many Korean households. It is often called Korean chili paste in English.

What Does Gojuchang Taste Like?

Gojuchang has a savory flavor with a mild to medium heat. If you are concerned about it being too spicy, don’t let that stop you from giving gochujang a try. Heat levels can vary by brand, so make sure to check the packaging at your local store for heat indicators before buying.

You can scale back on the amount if you’re concerned about the spice level.

This paste is so versatile – you will find many recipes that benefit from its flavour. It works beautifully in marinades for chicken wings, ribs, and of course cauliflower. Remember that a little goes a long way, so start out small and add more gradually to suit your taste.
