This versatile breakfast casserole has everything you love about breakfast. Meat, eggs, melted cheese and potatoes. It’s so easy to make ahead the day before or store it in your freezer for an easy, comforting meal when you need one.

One of the best things about weekends in our home is a slower pace. A hurried breakfast becomes a lazy brunch, and rushing out the door becomes sitting around the table enjoying a meal to carry us through our afternoon activities. When I make this casserole the night before, all I have to do the next morning is pull it out of the fridge and pop it in the oven.
Even better – when I include this in my freezer meal prep, I only need to remember to pull it out of the freezer the night before. No scrambling to prepare it that morning or the night before.

Breakfast Tater Tot Casserole
Ingredients:
- 2 slices bacon cooked and chopped
- 3/4 lb. ground breakfast sausage browned and cooled
- 2 cups cheddar cheese shredded
- 1 1/2 cups whole milk
- 4 egg
- 1/2 tsp. pepper
- 1/2 tsp. paprika
- pinch salt
- 1 3/4 lbs. tater tots, frozen
- optional: chopped chives for garnish on day of cooking
- 1 9×13 foil tray or casserole dish
Assembly Instructions:
- In a medium or large bowl, whisk together eggs, salt, pepper, paprika, and milk.
- In a rectangular foil tray, add the ground sausage, 1 1/2 cups of the cheese, and the tater tots and stir.
- Pour the egg mixture on top.
- Sprinkle with 1/2 cup shredded cheese and the bacon.

Cooking Instructions:
- Thaw.
- Bake at 350° uncovered for 1 hour.

How to Serve This Recipe:
Something as simple as sliced apples or oranges wedges are a perfect complement to this casserole. If you want to dress it up a little, consider a fruit salad with melon, mango, and pineapples for a bright addition to your brunch table.
