Breakfast Quesadillas

These breakfast quesadillas are the perfect addition to your freezer meal plan for busy mornings. Plus, you can easily change out ingredients to things you have on hand to use on veggies in the fridge or change up the flavors.

Breakfast Quesadillas Recipe

Ingredients

  • 6 egg
  • 1 Tbsp. milk or heavy cream
  • salt
  • pepper
  • 1 Tbsp. butter
  • 1/4 lb. ground breakfast sausage or Italian sausage, or veggie sausage substitute, cooked and cooled
  • 1/4 red bell pepper, diced
  • 2 Tbsp. purple onion minced
  • 1 clove garlic, minced
  • 3/4 cups Tex-Mex or cheddar cheese, shredded
  • 12 medium flour tortillas

Assembly Instructions:

  1. Whisk eggs, milk or cream, salt, and pepper in a bowl.
  2. Melt butter in a skillet and add the egg mixture. Scramble eggs and cook until they reach the desired doneness.
  3. In a large bowl, mix scrambled eggs, ground sausage, red pepper, purple onion, minced garlic, and shredded cheese.
  4. Spread egg mixture on half of a flour tortilla. Fold the other half over.
  5. Freeze flat in a single layer on a baking sheet. Put parchment paper between layers if you want to have multiple layers.
  6. Once fully frozen, transfer to large resealable freezer bags.

Cooking Instructions:

  1. Warm frozen breakfast quesadilla on a plate in the microwave.
  2. Defrost setting first, then heat for 1-2 minutes.
  3. Thaw.
  4. Heat quesadillas in a large skillet over medium heat for 10 minutes, turning once.
  5. Or heat in a 350° oven on a baking sheet for 8-10 minutes.
  6. Or in the Air Fryer at 350° for 8 minutes.
  7. Can serve with chunky salsa if desired.

Additional Ways to Make This Recipe

The great thing about this recipe is that you can use whatever types of vegetables or proteins you have on hand. Additional proteins could include shredded chicken, chorizo, turkey sausage, or black beans. You can also use chopped mushrooms or whatever cheeses you have on hand.

Serve it with fresh cilantro, diced tomatoes, sliced avocado, green onions, salsa, hot sauce, or diced green chilies for additional spice.
