Grab-and-go breakfasts are a lifesaver on certain days. You know the days I’m talking about, right? When you wake up late and know that you will be going non-stop from morning to night? Frozen pastries are okay, but if you can add protein for your family with these breakfast burritoes, that’s even better.

Breakfast Burritos Recipe
Ingredients for Breakfast Burritos
- 6-8 flour tortillas, large
- 12 eggs
- 2 Tbsp. butter
- salt to taste
- pepper to taste
- 8 oz. bacon or sausage cooked and cooled
- 1 green bell pepper diced
- 2 cups cheddar cheese shredded
- aluminum foil
- 1 large (gallon) freezer bag or reusable silicone bag
How to Make Breakfast Burritos for your Freezer
Assembly Instructions
- Cook scrambled eggs with butter.
- On a flour tortilla, add a spoonful of scrambled eggs, a slice of bacon or loose sausage, diced peppers, and shredded cheese.
- Wrap into a burrito shape and wrap in foil.
- Place in a large resealable freezer bag and freeze.
Cooking Instructions
- Remove desired amount from the bag to thaw.
- Cook in microwave for 1-2 minutes, or in 350° oven for approximately 10 minutes.
Air Fryer Instructions
- Remove desired amount from bag.
- Brush or spray oil on all sides of burritos.
- Cook from frozen in air fryer preheated to 350° for 15 minutes, flipping once.
- From thawed, cook in 390°F air fryer for 2-3 minutes, turning once.
How do I reheat frozen breakfast burritos?
My favorite way, and the fastest way, is to thaw them first (overnight) and then cook for one to two minutes in the microwave. You can also pop one in the air fryer for two or three minutes or bake one in the oven for ten minutes. If your burritos are frozen, it will take 15 minutes in the air fryer, and you’ll have to estimate the microwave time based on your microwave.
How do I meal prep breakfast burritos?
The beauty of this recipe is that you can make it in bulk. Make up a big batch of scrambled eggs, bacon, sausage, and then stock up a variety of breakfast burritos in your freezer. Label the bags so that you know which ones have sausage and which ones have bacon. You can even make one type on weekend and one type a different weekend to streamline the process. You can even make the meats and dice the veggies on a weeknight before your freezer meal cooking session on the weekend.
What is the best way to fold breakfast burritos?
First, place the ingredients for the breakfast burrito in the center. Do not add to much filling. Then, fold one side over. Next, fold the ends toward the center. Finally, roll the burrito from the center outward to the last remaining side to roll it up and form the burrito shape. Wrap this in foil for storage so that they hold their shape well until frozen.
Breakfast Burrito Recipe Ideas
Besides bacon or sausage, you can also use cooked and diced ham, taco meat, or chorizo. Even chopped up leftover steak could work, especially fajita steak or skirt steak.
Add some heat if you like the spice with red chili flakes or ancho chili powder. You can also add diced hot peppers.
Different cheeses can add variety to your burritos. Cojito cheese, sharp cheddar, colby jack, or Mexican cheese blends all work really well.
Anything that works for an omelet will work for a breakfast burrito. This opens up the option of diced and sautéed mushrooms, veggies like squash or onions, and or cold cuts.
How do I store Breakfast Burritos?
Keep them in the freezer and make one at a time as needed. They microwave in one or two minutes and are ready to eat. I do not recommend saving leftovers, but if you have someone who doesn’t finish them off in one go, you could cut each one in half before wrapping them.
What to Serve with Breakfast Burritos
While these can be eaten as is, on-the-go, it is so much fun dress them up. Here are our favorite things to add to our breakfast burritos for dipping.
- Salsa. Try a variety of different kinds and accommodate the heat levels desired by different family members.
- Guacamole. Homemade or store-bought for convenience.
- Avocado Mash. If you don’t want full guacamole, just mash an avocado with salt and pepper. You can also buy convenience servings of this mixture at warehouse stores and grocery stores.
- Avocado Slices. Go fresh and simple with a slice of avocado.
- Sour Cream.
- Crema. Grocery stores have started carrying so many different crema sauces in the condiments section now, and a drizzle of any of these would be yummy on your breakfast burrito.
