Who doesn’t look forward to a delicious steak dinner? It’s a crowd pleaser! These perfectly seasoned steak bites are fast, easy, and versatile when you need dinner on the table in a flash. The recipe is made up in one pound portions, so you can easily scale it up to feed more people.
According to my family, meat and potatoes is where it is at. The easiest way to guarantee they come home for dinner is to make steak bites with potatoes or any other meat-centric meal in our Freezer Meals 101 club.

Ingredients for Steak Bites
- 1 lb. steak. New York strip, sirloin, or ribeye, cut into 1-inch cubes
- 1 Tbsp. olive oil
- 2 tsp. soy sauce
- 3 clove garlic, minced
- 1/4 tsp. paprika
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 1 large (gallon) freezer bag or reusable silicone bag

- Add all ingredients to a large freezer bag.
- Remove excess air.
- Seal and freeze.
Cooking Instructions
- Preheat Air Fryer for 4 minutes.
- Air fry for 10-20 minutes, depending on how you like your steak.
- Stop twice to shake the drawer.
- Serve with melted compound butter (butter mixed with herbs such as thyme, rosemary, or parsley).
- Alternatively, sear in skillet over medium high heat in compound butter. Cook cubes on all sides until desired doneness.
How do I cut the steak for steak bites?
This is a great question! For tender beef, you should always cut against the grain. You can check for the grain by looking to see which way the long muscle strands run through the meat. Once I’ve found the grain and lined up with it, I like to turn the meat 45º to slice it against that grain at an angle.
How do I know when my steak bites are done?
Use an instant-read thermometer. A quick check of the temp makes sure that you have the meat done to your liking. Cooking steak bites is incredibly fast, so you may not need this step. Here is a doneness chart to help guide your cooking process.
- Rare = 125ºF
- Medium Rare = 130-135ºF
- Medium = 135-140ºF
- Medium Well = 140-150ºF
- Well Done = 155ºF+

Bring on the heat. Add red pepper flakes or ancho chili powder to your marinade when you want to amp up the heat. Start with a half teaspoon of either of these spices. As an alternative, you could add diced hot peppers to the marinade.
