Instructions
Assembly instructions:
Whisk eggs, milk or cream, salt, and pepper in a bowl.
Melt butter in a skillet and add egg mixture.
Scramble eggs and cook until they reach desired doneness.
In a large bowl, mix together scrambled eggs, ground sausage, red pepper, purple onion, minced garlic, and shredded cheese.
Spread egg mixture on half of a flour tortilla.
Fold the other half over.
Freeze flat in a single layer on a baking sheet.
Put parchment paper between layers if you want to have multiple layers.
Once fully frozen, transfer to large resealable freezer bags.
Cooking instructions:
Warm frozen breakfast quesadilla on a plate in the microwave.
Defrost setting first then heat for 1-2 minutes.
Thaw.
Heat quesadillas on a large skillet over medium heat for 10 minutes, turning once.
Or heat in a 350° oven on a baking sheet for 8-10 minutes.
Or in the Air Fryer at 350° for 8 minutes.
Can serve with chunky salsa if desired.
