Bacon Wrapped Blue Cheese Stuffed Dates

Bacon-Wrapped Blue Cheese-Stuffed Dates Recipe

Ingredients:

  • 12 strips of raw bacon, cut in half cross-wise
  • 3 oz. blue cheese
  • 24 large dried Medjool dates pitted

Assembly instructions:

  1. Split dates open and carefully load the date cavity with blue cheese using a teaspoon.
  2. Gently wrap each date in a half strip of bacon.
  3. Place individually on a baking sheet and freeze before transferring to a freezer bag.

Cooking instructions:

  1. Cook from frozen.
  2. Bake on a parchment paper-lined baking sheet at 400°F for 20-25 minutes until bacon is crispy.
  3. Or bake in the Air Fryer 11-13 minutes, turning once.
  4. Serve warm.

For a healthier option, substitute the bacon for turkey bacon.

How are Medjool dates different from regular dates?

The main difference between medjool dates and regular dates is their size. Medjool dates are larger and softer, making them easier to stuff than regular dates. They are also naturally sweeter than regular dates.

Look for Medjool dates in the produce section of your local grocery store. They are often packaged in a container or bulk food bins.
