Breakfast Hash

Ingredients:

  • 28 oz. hash browns, frozen, cubes (note: not the super tiny cubes)
  • 1/2 onion, minced
  • 1 green pepper, diced
  • 3 slices bacon, cooked and crumbled
  • 1 Tbsp. Cajun seasoning

Assembly instructions:

  1. Combine all ingredients in a large freezer bag. Remove excess air. Seal and freeze.

  1. Thaw or partially thaw. Cook in a bit of oil in skillet, stirring occasionally until cooked through.

Why Use Larger Potato Chunks?

Larger chunked potato hash browns are preferred for this recipe because they maintain their structural integrity much better than smaller chunks or shredded hash browns do. They also tend to clump less, allowing the flavour to spread throughout the mix and giving you an easier cooking experience.

Vegetarian Alternatives

For our vegetarian or vegan friends, simply leave out the bacon and consider adding an extra pepper to bulk up the volume of the dish.
