Orange Cumin Chicken Recipe

Ingredients:

  • 10 chicken thighs, boneless, skinless
  • 2 cloves garlic, minced
  • 3 Tbsp. orange juice fresh
  • 3 Tbsp. olive oil
  • 1 tsp. orange zest
  • 1 Tbsp. cumin

Assembly Instructions:

  1. Place all ingredients into a large, resealable freezer bag.
  2. Squish gently to mix.
  3. Remove the excess air, seal, and freeze.

Cooking Instructions:

  1. Thaw.
  2. Oven: 350° for 45-60 minutes, uncovered.
  3. Skillet: 15-25 min. Over medium-high heat, turning occasionally.
  4. Chicken is fully cooked when it reaches an internal temp. of 165°.

Ways to Serve this Chicken

This chicken goes great with white rice and some mixed vegetables for a complete meal. To add even more flavor, you can pair it with cumin rice or cilantro-lime rice. You could also have quinoa with a squeeze of orange or lime, or some flat bread like naan.

Additional sides could include roasted sweet potatoes or carrots, sauteed green beans, broccoli, or some sheet-pan mixed veggies.

If you crave something fresh, you could include a simple citrus salad (orange slices, greens, light vinaigrette), an avocado and tomato salad with lime juice, or a cucumber salad.
