This flavorful and easy balsamic chicken freezer meal is easy to prep, full of flavor, and perfect for those busy weeknights when you want dinner on the table in 30 minutes or less!

Balsamic Chicken Recipe
Ingredients
- 4 chicken breasts, boneless, skinless, cubed, raw
- 1 onion sliced
- 3 cloves of garlic, minced
- 28 oz. diced tomatoes
- ⅓ cup balsamic vinegar
- 3 Tbsp. olive oil
- 1 Tbsp. honey
- 1 tsp. oregano
- 1 tsp. basil
- 1 tsp. rosemary
- ½ tsp. thyme
- ½ tsp. salt
- ¼ tsp. pepper
Assembly instructions:
- Place all ingredients in a large, resealable freezer bag.
- Squish to combine.
- Remove the excess air, seal, and freeze.

Cooking instructions:
- Thaw.
- Empty bag contents into a casserole dish and bake uncovered for 20-30 minutes at 375°.
- Alternatively, cook this in a slow cooker for 4-5 hours on low.
- Chicken is fully cooked when it reaches 165° when checked with a meat thermometer.

Additional Tips for this Recipe
You can substitute the chicken breast for chicken thighs. You can even make this a vegetarian dish by using plant-based chicken strips for this recipe.
To make this a completely Keto recipe, omit the honey when making this dish.

How to Serve this Recipe
This dish pairs great with rice to soak up the delicious sauce from the chicken. You could also use garlic mashed potatoes, orzo pasta, quinoa, or buttered egg noodles. You can also top it with Parmesan cheese or a drizzle of the balsamic glaze for extra punch.
To make this a complete meal, add a fresh side salad, garlic bread, or Mediterranean roasted vegetables.
