This Cilantro Lime Rice recipe is the perfect side dish to have on hand in your freezer. Pull it out for taco night, burrito bowls, or as a side for BBQ grilled meats.

A great tip for stacking your freezer is to take parts of meals you often use, like taco meat or rice, and batch freeze them to have on hand when you need them. This Cilantro Lime Rice is a perfect example of that.

Cilantro Lime Rice Recipe
Ingredients:
- 1 cup long-grain rice, rinsed and drained
- 1 1/2 cup water
- 3 tsp. olive oil
- 1 tsp. lime zest
- 1 clove garlic minced
- 1/2 cup cilantro, finely chopped
- 1 1/2 Tbsp. lime juice
- 1/4 tsp. salt
Assembly instructions:
- Add rice, water, and 1 tsp. olive oil to a pot.
- Bring to a boil, cover, and reduce to a simmer.
- Simmer 18-20 minutes.
- Remove from heat.
- Keep covered for 5 minutes.
- Using a fork, fluff the rice, add lime zest, garlic, and 2 tsp. olive oil, cilantro, lime juice, and salt.
- Stir to combine.
- Transfer to a freezer bag or freezer-safe container.

Serving instructions:
- Reheat in the microwave or a non-stick skillet over medium heat.

Store leftovers in an airtight container in the fridge for 3 to 4 days. You can also use white or brown rice for this recipe.
