Cottage Cheese Pancakes
Ingredients:
1 1/2 cups cottage cheese
4 eggs
1 tsp. vanilla extract
1 cup flour
2 Tbsp. sugar
1 Tbsp. baking powder
Assembly instructions:
Mix cottage cheese, eggs, and vanilla in blender. In a bowl, mix together the flour, sugar, and baking powder and then stir the wet ingredients into the dry ingredients until just combined.
Add some oil or cooking spray to a skillet or griddle on medium-low heat and add about 1/4 cup of pancake batter. Flip when edges are dry or bubbles begin to form. Once cooked, lay in single layer on baking sheet. Freeze. When fully frozen, transfer to a large freezer bag, seal, and freeze.
Serving instructions:
Reheat in the toaster. Serve with syrup or fruit.
