Nothing quite satisfies the stomach and soul like a bowl of this Low Carb Chili on a chilly day (see what we did there?). In less than an hour of your time, this filling dinner will be prepped, cooked, and ready to enjoy!

My husband has an on-again, off-again relationship with Keto so on one of his low carb kicks, he invented this chili and got so much positive feedback from everyone who tried it. I have been wanting to share the recipe with you for years, but when I would ask, it was “a little bit of this and a little bit of that” until I finally nailed him down on it after he put it into an app for food tracking.
Because this recipe is my husband’s creation, we lovingly refer to it as Mr. Freezer Meal’s Low Carb Chili in the Freezer Meals 101 Club!

Low Carb Chili Recipe
Ingredients:
- 1 lb. lean ground beef, browned and cooled
- 6 oz. bacon, cooked and chopped
- 1 onion, diced
- 3 jalapeño pepper, finely diced
- 3 clove garlic, minced
- 19 oz. black beans
- 56 oz. diced tomatoes
- 28 oz. tomato sauce
- 1 Tbsp. chili powder
- 1/2 tsp. cayenne powder
- 1 tsp. paprika
- 2 tsp. Montreal steak spice
Assembly instructions:
- Mix together all ingredients in a bowl and transfer to a large resealable freezer bag or if you want individual portions, into Souper Cubes or quart bags. Freeze.

Cooking instructions:
- Thaw. Heat over medium-high heat on stovetop until bubbling. Reduce to a simmer for 20 minutes. Or in slow cooker on low for 2-4 hours. Or in microwave, heat 2-3 minutes until bubbling. Serve with a dollop of sour cream and garnish with sliced green onions.
