Turkey Sweet Potato Skillet
Ingredients:
- 1 lb. ground turkey, cooked and cooled
- 1/2 onion, diced
- 3 Tbsp. garlic, minced
- 2 Tbsp. taco seasoning
- 2 medium sweet potato, peeled and diced into 1/2 inch cubes
- 1 red bell pepper, diced
- 15 oz. black beans, rinsed and drained
- 4 oz. green chilies
- 1/2 cup water
- salt to taste
- 1/2 cup jalapeno jack cheese, shredded
Day of cooking:
- avocado, cubed
- cilantro, chopped
Assembly instructions:
- Add shredded cheese to quart sized freezer bag. Seal.
- Add other ingredients to a large resealable freezer bag. Remove excess air and seal. Staple bags together above the seal. Freeze.

Cooking instructions:
- Thaw. Bring to a simmer in a skillet. Reduce to low, cover, simmer 15-20 minutes. Top with cheese. Cover to melt. Serve topped with diced avocado and cilantro.

While ground turkey is a great lean protein option, feel free to swap for ground beef if you prefer a heartier meat. Adding corn can also take the sweetness level of this Turkey Sweet Potato Skillet up a notch, complimenting the smokey, spicy flavours of the taco-seasoned turkey. The black beans can be replaced by pinto or kidney beans or additional bell pepper, depending on your preferences.
