Tuscan Tortellini Skillet

Tuscan Tortellini is a simple, colourful dish packed with flavour. Who can resist Italian sausage with a tomato and creamy garlic sauce? This meal freezes well, and easily transitions to the one pan you will need for cooking. Whether you’re rushing between activities or enjoying a quiet evening at home, this recipe just has that good, satisfying comfort food feel.

My favourite thing about this tortellini dish is that it all cooks together in one pan – and I’m always happy when I don’t have a sink full of big pots and pans after a meal. There’s no need to start out by boiling a pot of water, pulling out a strainer, then trying to portion out the pasta with the sauce (is there ever enough sauce?). Cooking it all together creates so much flavour as the sauce is incorporated into the pasta.

Tuscan Tortellini Skillet

Ingredients:

  • 1 lb. ground Italian sausage browned and cooled
  • 1 onion diced
  • 4 clove garlic minced
  • 16 fl. oz. pasta sauce or Red Sauce
  • 14 oz. diced tomatoes
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • pepper to taste
  • 19 oz. cheese tortellini

For Day of Cooking:

  • 3 cup fresh spinach sliced, for day of cooking

Assembly Instructions:

  1. Add all ingredients except spinach to a large freezer bag.
  2. Squish gently to combine.
  3. Remove excess air, seal and freeze.

Day of Cooking Instructions:

  1. Thaw.
  2. Add large bag ingredients to large skillet.
  3. Bring to boil. Cover and reduce to simmer for 8 minutes.
  4. Stir in spinach until wilted.
  5. Top with Parmesan cheese if desired.

Serve by simply scooping into your favourite bowl and topping with your choice of toppings. We recommend Parmesan cheese, and red pepper flakes if you like a bit of spice.

Tuscan Tortellini Skillet Variations:

This dish is great just the way it is, but it’s also very versatile.

  • Swap out regular (or mild) Italian sausage for spicy Italian sausage.
  • If you don’t have fresh spinach on hand, 1/4 – 1/2 cup of frozen spinach works well.
  • You can swap the heavy cream for a lighter cream or evaporated, but the sauce will be thinner.
  • Adding grated fresh zucchini can provide extra colour and increase the veggie intake without complaints.

Serving Suggestions:

This dish is great on it’s own, but it pairs well with a simple spinach salad with Italian dressing. You can also serve it with our Freezer Garlic Bread to soak up the delicious sauce.
