Greek Chicken Bites Recipe

Ingredients

  • 3 chicken breasts, boneless, skinless raw, cubed
  • 1 tsp. dill
  • 1 tsp. oregano
  • 1/2 tsp. coriander
  • 1/2 tsp. cumin
  • 1/4 tsp. cinnamon
  • salt and pepper to taste
  • 2 Tbsp. olive oil
  • 1 tsp. lemon juice

  1. Add raw cubed chicken and other ingredients to a freezer bag.
  2. Shake to combine.
  3. Remove excess air, seal, and freeze.

Can I use a different meat?

Yes. You can use boneless chicken thighs, cubed pork chops, steak, or even lamb with the same seasonings.

What kinds of dressings could I use in th pita?

Besides tzatziki or a yogurt based dressing, you could use ranch, Basalmic vinaigrette, Greek vinaigrette, or, if you have the time, this homemade garlic aioli.

Greek Chicken Bites Recipe Ideas

We love to add tzatziki or a yogurt dill dressing to the chicken. Feta, tomatoes, sliced olives, and romaine are also excellent on a pita wrap. You can actually add any dressing you like. Regular Greek vinaigrette is also an great choice.

If you aren’t in the mood for a pita, you can add this tasty chicken to a Greek salad, a baked potato, a sandwich, a wrap, or even a funny Greek quesadilla. You could just serve it over rice with or without veggies, and guess what? Mashed potatoes would also work.

Make it a cheesy panini with a little bit of added mozarella and fresh basil. You’ll need a skillet, oven, or panini press to melt the cheese!

For a special touch, have hummus, crazy feta, or red pepper dip to add to your pita sandwiches.

Roasted corn, tomatoes, cucumbers, onions, chickpeas, pickled onions, and avocado are all fun things to add to your Greek chicken bites in a pita wrap or rice bowl.

How do I store Greek Chicken Bites?

Cooked Greek Chicken bites can be put in an airtight container and kept in the fridge for up to three days. Reheat as desired using a hot skillet. The microwave can work, but it will turn the chicken bites into rubbery and hard chicken very quickly.

What to Serve with Greek Chicken Bites

We love serving this beautiful chicken on a pita and as such it can be served with any side you want. It doesn’t have to be traditional! You can go with rice, salad, or potatoes in sauce like you would find at the Greek restaurants, but you can also go with potato chips or tater tots. It all works.

Naan is one of our favorite adds when we serve this chicken over rice. When we go with pitas, I’m a big fan of tater tots and fries because they can go in the freezer with all of our meal bags and bake in the same amount of time most of our meals come together. I also love picking up one or two fresh salads in bags at the grocery store each week to add that ever important green vegetable to our meals.
