Ingredients:

  • 10 oz. spinach, frozen, chopped, thawed, and drained
  • 2 cups sour cream
  • 8 oz. cream cheese, softened
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, shredded
  • 14 oz. artichoke hearts, drained and chopped
  • 2 clove garlic, minced
  • 1 tsp chili flakes optional
  • salt
  • pepper

Assembly instructions:

  1. Combine all ingredients together in a large bowl. Divide equally between two large freezer bags or 4 medium freezer bags.

Preparing the spinach the right way is essential to this Spinach & Artichoke Dip turning out. We’re partial to spinach that’s been frozen, chopped, thawed, and then, most importantly, drained. Just press the thawed spinach in your hands or in paper towel. This removes the excess liquid from the spinach, allowing the flavour and texture to stick around without the extra moisture. You can use fresh spinach if needed, but we’d recommend wilting it in a skillet to cook off the moisture before throwing it in.

How can I avoid separation or greasiness in my dip?

Speaking of moisture, it can be the downfall of this dish. It’s important to remove the extra moisture not only from your spinach, but also from your artichoke hearts. If you skip this step, the extra liquid can cause the fats in your dip to separate, which can cause a greasy pool. What’s the best way to reheat Spinach & Artichoke Dip?

If you’re lucky enough to have leftovers of this dip, you can put them into a covered, oven-safe dish and reheat at 350° for 15-20 minutes. If you want the crispy brown top on your dip, remove the cover for the last 5 minutes, and voila! Slower reheating will help reduce the chances of separation.
