Pizza Soup Recipe

Since pizza is always a hit with the family, you can’t go wrong by adding a few pizza flavored dinners to your weekly meal rotation. And with this pizza soup recipe, you can enjoy all the flavors of your family’s favorite pepperoni dinner in a warm and hearty bowl of soup. I’ve found that anything with the word “pizza” in it has a decent chance of being a win. For that reason, I made Pizza Casserole, Pizza Buns, Tater Tot Pizza Casserole, Pizza Stuffed Chicken, and now, this Pizza Soup.

Pizza Soup Recipe

Ingredients:

  • 4 ounces sliced pepperoni, quartered
  • 4 slices bacon, cooked and crumbled
  • 2 cloves garlic, minced
  • 24 ounces pizza sauce
  • 1/2 cup onion, chopped
  • 1/2 cup green pepper, chopped
  • 1 teaspoon oregano
  • 1/2 teaspoon pepper
  • 3 cups beef broth
  • 1 cup shredded mozzarella cheese
  • optional: croutons for day of serving

Assembly Instructions:

  1. Place the pepperoni, bacon, garlic, pizza sauce, onion, green pepper, oregano, pepper, and beef broth in a large resealable bag. Remove the excess air from the bag and seal.
  2. Place the mozzarella cheese in a medium sized resealable freezer bag and seal. Staple the bags together above the seal.
  3. Place the soup ingredients in the freezer until you’re ready to start cooking.

Stovetop Cooking Instructions:

  1. Transfer the soup ingredients to the refrigerator to thaw overnight.
  2. Pour the ingredients into a large stockpot and bring to a boil over medium high heat.
  3. After the soup starts boiling, reduce the heat to low and simmer for 20 minutes. Garnish with the cheese and if desired, the croutons.

Crock Pot Cooking Instructions:

  1. Transfer the soup ingredients to the refrigerator to thaw overnight.
  2. Pour the contents of the large bag into the bowl of your slow cooker. Cook on high for three hours.
  3. Sprinkle the mozzarella cheese over the top of the soup, then put the lid back on for 15 minutes to give time for the cheese to melt.

Can You Freeze Soup?

This quick and easy soup recipe is perfect for meal prepping because it’s so easy to freeze! And the best part about preparing soup for freezer cooking is that there’s no cooking involved. All you have to do is freeze the ingredients and heat them up when you’re ready to enjoy a bowl of homemade soup.

As you’re getting your soup ingredients ready for freezing, use these tips to help you get started:

  • Freeze the soup in bags. To ensure your soup ingredients don’t take up a ton of space in your freezer, freezing the soup in bags is your best option. To help make it easier to add the ingredients to the bag, use a freezer bag stand to hold the bag open while you add the ingredients.
  • Remove as much air as possible. To reduce the chances of freezer burn, try to remove as much air from the bag as possible before sealing it.
  • Store the bag flat. Keep the space needed for your soup to a minimum by placing the bag flat in the freezer. After it’s frozen, you can stack the flat bags on top of each other to make storage even easier.
  • Label your bags. Don’t forget to write the name of the recipe, the date of freezing and the expected expiration date on the container. When stored properly, your soup will stay good for up to three months in the freezer.

Ingredients:

  • 2 pounds beef stir fry strips
  • ½ cup onion, thinly sliced
  • 3 cloves garlic, minced
  • 2 teaspoons ginger, minced
  • 1 cup beef broth
  • ¼ cup soy sauce

Assembly Instructions:

  1. Combine the beef strips, onion, garlic, ginger, beef broth, and soy sauce in a large freezer bag. Squish the ingredients together to combine the beef with the sauce.
  2. Remove excess air from the bag and seal to close. Freeze the ingredients until you’re ready to cook.

Using fresh ginger is a great way to add a ton of flavor to your meal. But if you’ve never prepared fresh ginger root before, you may be wondering how to mince it to add it to your sauce. Just follow these two simple steps to prep your fresh ginger.

  • Peel the ginger root. Use the side of a spoon to peel the outer layer off the root before you start chopping and mincing.
  • Grate the ginger. The easiest way to mince ginger is to use a grater or microplane. Simply rub the ginger over the grater to finely chop the root. If you don’t have a grater, you can also use a sharp knife to cut the ginger into tiny pieces.

Our Ginger Hack for Freezer Meals:

Our hack for saving time but still getting that fresh ginger taste is to use the squeezy tube ginger. You can usually find it in the produce section at your local grocery store. It’s already minced so it saves that step but tastes fresher in my opinion than ground ginger.

Can I Use Ground Ginger in Ginger Beef?

Fresh ginger is the best way to add flavor to your sauce, but taking the time to prepare fresh ginger isn’t easy if you’re in a hurry. If you don’t have any fresh ginger on hand, ground ginger can be used to prepare the sauce for your beef. But since ground ginger has a much stronger flavor than fresh, you won’t need as much. How Do I Thicken Ginger Beef Sauce?

Since you’ll be preparing this ginger beef recipe in your slow cooker, the sauce added to your beef should thicken as the meat cooks. But if you feel like the sauce is too runny after the beef has finished cooking, you can easily thicken it with a little bit of cornstarch.

Start by combining two tablespoons of cornstarch with two tablespoons of cold water. Stir the two ingredients together until the cornstarch dissolves and add the mixture to your slow cooker. Turn the heat up to high and place the lid back on the crockpot. Allow it to simmer for around 30 minutes, until the sauce thickens.

To speed up the cook time of your sauce, you can also transfer the liquid from the crockpot to a saucepan and add the cornstarch mixture. Simmer the sauce until it thickens, around 10 minutes.

Make Ahead One Pot Cajun Chicken Pasta

Pasta is always a safe bet when it comes to finding family-friendly dinner ideas. And when you add veggies and Cajun spices to the pot, you have a delicious dinner that everyone is sure to enjoy. On top of being packed with flavor, this one pot Cajun chicken pasta is also super simple to make. Prep the ingredients ahead of time and store them in your freezer until you’re ready to start cooking. Pasta is always a comfort food for me, so being able to make these dishes ahead and then cooking them up including the pasta all in one pot is awesome. One pot equals less dishes. And that’s always a win for me!

Of all the one pot freezer meals we made this year, this cajun chicken pasta one topped my list of bests.

One Pot Cajun Chicken Pasta Recipe

Ingredients:

  • 1 pound boneless, skinless chicken breasts, cooked and cut into 1 inch cubes
  • 1 1/2 tablespoons Cajun seasoning
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 purple onion, halved and thinly sliced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 19 ounces diced tomatoes with spicy red pepper
  • 1/4 cup heavy cream
  • 4 ounces cream cheese
  • 1 tablespoon parsley
  • salt and pepper

For Day of Cooking:

  • 4 cups penne pasta

Assembly Instructions:

  1. Combine the cooked chicken with the Cajun seasoning, bell peppers, onion, garlic, chicken broth, tomatoes, heavy cream, cream cheese, parsley, salt, and pepper in a large freezer bag. Squeeze the ingredients together to mix.
  2. Remove excess air from the bag and seal to close the bag. Freeze the ingredients until you’re ready to prepare the pasta.

Freezer Friendly Moroccan Chickpea Stew

Serving meatless meals is a great way to save money while meal prepping. And when it comes to vegetarian recipes, you can’t go wrong with soup! This flavorful Moroccan chickpea stew is a delicious vegan dinner idea that’s sure to be a hit with your family. And since it’s made with chickpeas and tons of veggies, it’s also a hearty dinner you can prepare a head of time and freeze until you’re ready to start cooking.clear bag with stew in it and the stew cooking in crock potWe were visiting our son and his fiancé in Kamloops, British Columbia, Canada when we first heard of Moroccan Chickpea Stew. On a hotel restaurant menu, there were the usual egg dishes and pancakes and such, but we spotted something that seemed out of place, a vegetarian stew. The waitress assured us it was the best choice so my husband and I both ordered it, him with poached eggs on top and me without.

The waitress was absolutely right. It was flavorful and unique. The dish came with crusty bread on the side for dipping in the remaining sauce and we ate every last bite!

I was determined to develop my own version of the recipe so that we could add it into our freezer meal rotation and this is the resulting recipe. 

Moroccan Chickpea Stew Recipe

Ingredients:

  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1-2 sweet potatoes, cubed into 1 inch cubes
  • 19 ounces chickpeas, drained
  • 28 ounces diced tomatoes
  • 12 black Kalamata olives
  • 1 cup vegetable broth
  • 1 tablespoon brown sugar
  • 2 teaspoons cumin
  • 2 teaspoons curry powder
  • 1 teaspoon paprika
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper
  • salt and pepper to taste

Assembly Instructions:

  1. Combine the onion, garlic, sweet potatoes, chickpeas, diced tomatoes, olives, vegetable broth, brown sugar, cumin, curry powder, paprika, cinnamon, turmeric, cayenne, salt, and pepper in a large freezer bag. Squeeze the ingredients together to mix.
  2. Remove excess air from the bag and seal to close the bag. Freeze the ingredients until you’re ready to prepare the stew.

Cooking instructions:

  1. Transfer the soup ingredients to the refrigerator to thaw overnight.

Ingredients
  • 1 onion chopped
  • 3 cloves garlic minced
  • 1-2 sweet potatoes cubed into 1 inch cubes
  • 19 oz chickpeas drained
  • 28 oz diced tomatoes
  • 12 black Kalamata olives
  • 1 cup vegetable broth
  • 1 Tbsp. brown sugar
  • 2 tsp. cumin
  • 2 tsp. curry powder
  • 1 tsp. paprika
  • 1/2 tsp. cinnamon
  • 1/2 tsp. turmeric
  • 1/4 tsp. cayenne pepper
  • salt and pepper to taste
Instructions
Assembly Instructions:
  1. Combine the onion, garlic, sweet potatoes, chickpeas, diced tomatoes, olives, vegetable broth, brown sugar, cumin, curry powder, paprika, cinnamon, turmeric, cayenne, salt, and pepper in a large freezer bag. Squish to combine.

  2. Remove excess air, seal, and freeze.

Cooking instructions:
  1. Thaw.

  2. Pour the contents of the bag into a large stock pot or Dutch oven. Bring the liquid to a boil, then reduce heat and simmer until the onions are tender, between two and four hours.

Slow Cooker Instructions:
  1. Thaw. Cook on high for four hours.

Ground Chicken Stroganoff

Comfort food is always a great option for dinner. But just because a meal is filling doesn’t mean it has to be fattening! With this easy ground chicken stroganoff, you can prepare a classic comfort dinner with less fat and calories than the traditional recipe. It was around then that I discovered how inexpensive it was in comparison to other meats and went about finding recipes I could use it in. So far, this Ground Chicken Stroganoff, our Thai Chili Chicken Lettuce Wraps, and BBQ Chicken Sloppy Joes have been the best we’ve tried.

Ground Chicken Stroganoff Recipe

Ingredients:

  • 1 pound ground chicken, cooked
  • 2 cloves garlic, minced
  • 1 cup white mushrooms, sliced
  • 10 ounces cream of mushroom soup
  • 1/2 cup sour cream or Greek yogurt
  • 2 teaspoons thyme
  • 2 1/2 teaspoons smoked paprika
  • 1/2 teaspoon pepper
  • pinch salt

For serving:

  • egg noodles
  • 1/2 cup sour cream or Greek yogurt
  • parsley

Assembly Instructions:

  1. Cook the ground chicken in a large skillet, crumbling the meat as it cooks. Once the chicken is cooked through, remove it from the pan and allow it to cool completely.
  2. Place the chicken in a large resealable bag with the garlic, white mushrooms, cream of mushroom soup, sour cream, thyme, paprika, pepper, and salt.
  3. Squeeze the contents of the bag together to mix the sauce into the meat and vegetables.
  4. Seal the bag and remove excess air. Place the bag in the freezer until you’re ready to eat.

Cooking instructions:

  1. Transfer the frozen ingredients to the refrigerator to thaw overnight.
  2. When ready to cook, heat a large skillet over medium heat. Add the contents of the bag and stir to mix the ingredients together.
  3. Bring the sauce to a simmer and allow the mixture to cook until the ingredients are heated through.
  4. To prepare the stroganoff in the slow cooker, transfer the thawed ingredients into the bowl of the crockpot and cook on low for two to five hours.
  5. When ready to serve, stir in the additional sour cream or Greek yogurt.
  6. Serve over cooked egg noodles topped with parsley.

What Can I Serve with Chicken Stroganoff?

Chicken stroganoff is typically served over egg noodles, but that doesn’t mean you’re forced to serve your dinner with that particular side. Try these different serving ideas as you’re preparing your own family’s dinner.

  • Mashed potatoes
  • White or brown rice
  • Cauliflower rice
  • Pasta or gluten free pasta
  • Zucchini noodles

How Do You Store Chicken Stroganoff?

If you happen to have some leftovers to save after dinner is over, all you have to do is transfer the stroganoff to an airtight container and place it in the refrigerator. The chicken and sauce will stay good for up to four days.
