Freezer meals already make my life easier, but 4-ingredient 20-minute dinners are what dreams are made of! This recipe is so quick and delicious, you’ll want it in your freezer for those busy nights when everyone is hungry and tired.
This is a great recipe to have on hand for a meatless Monday or any day of the week that you want to have a filling vegetarian meal.

Gnocchi al Arrabbiata Recipe
Ingredients:
- 1 onion, minced
- 1 clove garlic, minced
- 19 oz. diced tomatoes with spicy red pepper
- 1 lb. potato gnocchi, fresh
Day of Cooking:
- Fresh basil
- Parmesan cheese
Assembly instructions:
- Place all ingredients in a large resealable freezer bag.
- Remove excess air, seal, and then freeze.

Cooking instructions:
- Thaw.
- Empty the bag contents into a large skillet.
- Cook over medium heat, covered, for 6-8 minutes.
- Top with fresh basil and Parmesan cheese if desired.

Ways to Serve this Recipe
This recipe has a bit of a kick to it with the spicy red peppers. To control the amount of spice, you can use a can of regular diced tomatoes and add some red pepper flakes to the amount of kick your family wants.
To make this a complete meal, serve with garlic bread or focaccia to help soak up the juice from the tomato sauce. You can also serve it with a side of Caprese salad, fresh tomatoes, mozzarella, and basil to complement the Italian flavors. Or you can serve a tossed mixed greens with olive oil, balsamic vinegar, and shaved parmesan cheese.
