Cottage Cheese Egg Bites

These nourishing, high protein Cottage Cheese Egg Bites transfer easily from the freezer to your plate. They are they so quick and simple to prepare ahead of time, and they warm up in seconds in the microwave – ensuring that you have a savoury, satisfying meal as a healthy start to your day.

Cottage cheese adds a creamy texture as well as added protein, so you don’t need to worry about a rubbery texture like some egg bites tend to have. This recipe whips up so easily, and it’s such a relief to know you have these as an option when breakfast feels overwhelming.

Cottage Cheese Egg Bites:

Ingredients:

  • 6 eggs
  • 1/2 cup cottage cheese
  • salt to taste
  • pepper to taste
  • 1/4 red bell pepper, diced
  • 2 Tbsp. purple onion, minced
  • 1 Tbsp. chives, sliced
  • 1/4 cup cheddar cheese, shredded
  • 1 large (gallon) freezer bag or reusable silicone bag

Instructions:

Assembly instructions:

  1. Blend eggs, cottage cheese, salt, and pepper in a blender. Pour into greased muffin tin. Sprinkle each with red pepper, purple onions, chives, and shredded cheese.
  2. Preheat oven to 350°. Bake for 18-22 minutes. Cool. Transfer to a large resealable freezer bag. Freeze.

Cooking instructions:

  1. Thaw. Microwave wrapped in paper towel for 30 seconds or thaw and cook in air fryer for 4-5 minutes at 380°.

How to Customize:

If you’ve made egg bites before, you already know how easy they are to customize. Here are just a few ideas.

  • Meat: cooked, crumbled sausage, or bacon. Leftover chicken or ham.
  • Veggies: tomatoes, green peppers, zucchini, mushrooms, or spinach.
  • Cheese: feta, mozzarella, goat cheese, Monterey Jack… the sky’s the limit!
  • Seasoning: vegetable seasoning, greek, Italian, or experiment with spicy sauces.

Storage Tips:

Ensure that the egg bites have cooled completely before placing them in an airtight container or freezer bag. This is one of those mistakes we learned the hard way so you don’t have to! Trapping moisture in the bag from warm egg bites will affect the texture, so it’s worth it to wait until they have cooled completely. These keep well for up to 5 days in the refrigerator, or up to 1 month in the freezer.

How to serve Cottage Cheese Egg Bites:

After warming them in the microwave, serve the egg bites with cut fruit, warm toast with butter, or cinnamon rolls. I often place a spoonful of salsa on each egg bite for added zip.
