Blend eggs, cottage cheese, salt, and pepper in a blender. Pour into greased muffin tin. Sprinkle each with red pepper, purple onions, chives, and shredded cheese.
Preheat oven to 350°. Bake for 18-22 minutes. Cool. Transfer to a large resealable freezer bag. Freeze.
Cooking instructions:
Thaw. Microwave wrapped in paper towel for 30 seconds or thaw and cook in air fryer for 4-5 minutes at 380°.
