Texas Beef Soup Recipe

Ingredients:

  • 1 lb. beef stew meat
  • 1 onion minced
  • 2 cloves garlic, minced
  • 2 cups mixed vegetables, frozen
  • 1 ½ cup spicy vegetable juice or spicy Clamato juice
  • 2 cups beef broth
  • 2 tsp. seasoning salt
  • ½ tsp. pepper

Assembly Instructions:

  1. Place all ingredients into a large resealable freezer bag.
  2. Squish around gently to combine the ingredients.
  3. Remove the excess air, seal, and freeze.

Cooking Instructions:

  1. Thaw.
  2. Cook in the slow cooker on low for 3-5 hours.
  3. For an Instant Pot, add the contents of the large bag. Cook on manual high pressure for 20 minutes. All natural release for 10 minutes, and then do a quick release.

What is Clamato Juice?

Clamato juice is a savory tomato-based drink made from tomato juice blended with clam broth, plus seasonings like salt and spices. It has a bold, slightly salty, umami flavor. If you prefer not to use clam broth, you can substitute Clamato juice with regular tomato juice and a splash of Worcestershire sauce to achieve a similar flavor profile in your soup.

Ways to Adapt this Recipe

You can make this recipe into a vegetarian option by substituting the beef stew meat for a plant-based beef stew meat, such as Beyond Steak Tips or Gardein Beefless Tips. You can also substitute Seitan Chunks or Firm Tofu that has been frozen to give it a meatier texture.

Ways to Serve this Soup

You don’t need to add a lot to this recipe to make it a full meal since it already has protein and vegetables in it. You can add some crusty bread or garlic bread to round out the meal and soak up the broth as you enjoy it.
