This Marry Me Chicken Gnocchi Soup hits the spot on those cold winter evenings. The rich and creamy blend of cream, parmesan cheese, and sun-dried tomatoes, combined with chicken, potato gnocchi, and spinach, is a match made in heaven.

Marry Me Chicken Gnocchi Soup Recipe
Ingredients:
- 2 chicken breasts, boneless, skinless, cooked, cubed
- 1 onion, diced
- 4 cloves of garlic, minced
- 1/2 cup of sundried tomatoes, sliced
- 2 Tbsp. tomato paste
- 4 cups chicken broth
- 1 1/2 Tbsp. pesto
- 1 tsp. oregano
- 1/2 tsp. pepper
- 3/4 cup heavy cream
- 2 cups potato gnocchi, fresh
- 1/2 cup Parmesan cheese, shredded
On the Day of Cooking
- 3/4 cup spinach, fresh, chopped, optional
Assembly instructions:
- Into a large freezer bag, add cooked and cubed chicken, onion, garlic, sun-dried tomatoes, tomato paste, chicken broth, pesto, oregano, and pepper.
- Into a second large freezer bag, add heavy cream, potato gnocchi, and shredded Parmesan cheese.
- Remove excess air from both bags and seal them.
- Staple them together above the seal and lay flat to freeze.

Cooking instructions:
- Thaw.
- Bring the chicken bag contents to a boil in a large stovetop pot.
- Reduce heat and simmer for 12 minutes.
- Add other bag contents. Cook for 5-6 minutes.
- Stir in ¾ cup chopped spinach if desired.

How to Serve Marry Me Chicken Gnocchi Soup
When serving this, you can top it with parmesan cheese and red pepper flakes for some added heat.
This soup can be the entire meal, but you could choose to add garlic bread or a nice crusty artisan bread to help soak up all the delicious broth. You could also include a Caesar salad or Caprese salad (tomato, mozzarella cheese, basil, and balsamic drizzle).
Any leftovers can be stored in an airtight container and used for lunch the next day.
