One Pot Sausage and Vegetable Pasta

Fast, easy, and very tasty, our one-pot sausage and vegetable pasta is a great meal to serve your family on busy weeknights. Not quite a soup and not quite a stew, the rich broth and flavorful sausage with pasta make this meal memorable, comforting, and filling all at the same time.

One Pot Sausage and Vegetable Pasta Recipe

Ingredients

  • 1 lb. ring of garlic sausage, sliced
  • 1/2 red bell pepper, sliced
  • 1/2 orange bell pepper, sliced
  • 1/2 red onion, sliced
  • 14 oz. can of diced tomatoes
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1/2 tsp. red pepper flakes
  • 3 cups chicken broth
  • 1 1/2 cups mozza cheese, shredded
  • 3 cups small pasta
  • 1 large (gallon) freezer bag or reusable silicone bag
  • 2 medium (quart) freezer bags

How to Make One Pot Sausage and Vegetable Pasta

Assembly Instructions

  1. Add mozzarella cheese to medium bag.
  2. Remove excess air and seal.
  3. Add pasta to another medium bag.
  4. Remove excess air and seal.
  5. Add remaining ingredients to large freezer bag.
  6. Remove excess air and seal.
  7. Staple bags together above the seal.
  8. Lay flat to freeze.

Cooking Instructions

  1. Thaw overnight in the fridge.
  2. Add contents of the large bag to a large pot or deep skillet on the stove top.
  3. Bring to a boil over medium-high heat.
  4. Reduce heat to medium and stir in pasta.
  5. Cook for 15-20 minutes, stirring occasionally, until pasta is tender.
  6. Add mozzarella cheese and let melt or add cheese to individual servings.

Does the type of pasta used matter?

You can substitute the bow tie pasta (also known as farfalle) with the pasta of your choice. To keep the same cook times as listed in the recipe, choose a pasta with a similar shape and density. Good options similar to bow tie would include rotini or mini wheels. If you do choose a different pasta, you may need to increase the amount of liquid, cook time, or both.

What if I’m not a fan of tubed sausage in a casing?

Instead, make this same recipe with cooked ground sausage, diced chicken, or even leftover ham or taco meat! It will still be quite tasty.

How do I know when the food is ready?

When the pasta has reached your desired doneness, the dish is ready. Everything else is easy and will be up to temperature once the pasta is cooked. We like our pasta al dente which means “to the tooth” and indicates that the pasta should have just a little bit of toothiness left in it instead of being cooked until it is soft and smushy.

One Pot Sausage and Vegetable Pasta Recipe Ideas

You can use any sausage like this in a casing if you cannot find garlic sausage. Andouille sausage, turkey or chicken sausage, hot sausage — any of those will work.

This dish can be made in an Instant Pot. Place all of the ingredients in the pressure cooker, stir thoroughly to make sure all of the pasta is wet, and cook on high for nine minutes on high pressure.

Amp up the heat by doubling the number of red pepper flakes, adding a dash of your favorite hot sauce, or adding diced hot peppers to the pot.

Add traditional herbs and spices to give your pasta a Jambalaya flair — black pepper, oregano, paprika, thyme, cayenne pepper, garlic powder and onion powder.

Add a packet of taco seasonings, a drained can of black beans, and a cup of frozen corn to give your pasta a taco dish flair. Change the cheese to cheddar or a Mexican blend.

How do I store One Pot Sausage and Vegetable Pasta?

Keep leftovers in the refrigerator in an airtight container and use within three or four days. You can microwave individual servings for a couple of minutes to reheat — making it the perfect meal to take to work. Freeze leftovers in individual air tight containers for up to four months and thaw/reheat in the microwave.

What to Serve with One Pot Sausage and Vegetable Pasta?

This delicious one pot meal can stand on its own or be served with a green salad, fruit salad and/or a crusty French bread or dinner rolls. Garlic bread would also be lovely.
