Ingredients

  • 1 red pepper, in large cubes
  • 1 yellow pepper, in large cubes
  • 1 orange pepper, in large cubes
  • 1 purple onion, in large chunks
  • Andouille or chorizo sausage, sliced in 1/2 inch slices and halved
  • 4 cloves garlic, minced
  • 1 tsp. oregano
  • salt
  • 1 Tbsp. olive oil
  • 500 g potato gnocchi

  2. Remove excess air, seal, and freeze.

How do I know when my sheet pan dinner is ready?

When the sausage is hot throughout, the peppers are tender, and the gnocchi is cooked through, the meal is ready. If you use fresh gnocchi, it should take about 35 minutes. Since this type of sausage is cooked through when you purchase it, you just need to get it to 145ºF.

Can I use shelf-stable gnocchi?

Technically yes, but it may need cooked longer, or cooked differently if it needs rehydrated at all. If you are going to go with this option, consider trying it out in the oven once before making up a whole batch, or pre-cooking the gnocchi in water before adding it to your freezer bag. Fresh is definitely best in this case.

Can I make my own gnocchi?

If it makes you happy, go for it. It can be therapeutic to make and you can even get the teens or tweens involved. But to be honest, fresh store-bought gnocchi is the best of both worlds. It tastes like homemade in a convenient little package. Since weekends are busy too, I try to make my freezer meal prep as easy as possible.

You can add so many different things to this simple freezer meal recipe to change things up. If it can be baked for 35 minutes and matches the flavor profile of this dish it can be added! The first thing that comes to mind is chopped Granny Smith apples added on the day of cooking so they don’t oxidize in the freezer. Other options for chopped vegetables would include spicy peppers and green or yellow summer squash, all of which can be added to the freezer bag ingredients.

Most of the flavor for this dish comes from the sausage. Andouille or chorizo will add a little heat. Smoked sausage would be pretty benign if you prefer a milder flavor. If you want a lower fat option, go with turkey or chicken sausage in any of the above varieties. For a more traditional sausage get pork in any of the above varieties. You could also make this same dish with brats. Ground sausage is not a good choice here.

Bump up the heat even more with a half teaspoon of red pepper flakes or ancho chili powder.

A drizzle of warmed Alfredo sauce or garlic butter sauce would be a nice touch with this dish.

With the oregano, you might consider adding thyme and smoked paprika. This matches the seasoning of the Andouille sausage.

Leftovers should be refrigerated, will keep for several days, and can be reheated in the microwave for a quick lunch or snack.

What to Serve with Sausage Gnocchi Sheet Pan Dinner

A meal unto itself, this delicious combination of meat, veggies, pasta and cheese hits all of the right notes. We add shredded parmesan or an Italian cheese mix to ours! If you want to add more bulk to your meal, you can add a fresh salad and some kind of bread. Garlic bread, French bread, Italian bread, or fresh home baked bread will all work. I like to pick up a few bagged salads at the grocery store at the beginning of the week to add to our freezer meals all week long.
