Mediterranean Baked Cod Recipe
Ingredients:
- 1 lb. cod fillets
- 1/4 tsp. salt
- 2 cloves of garlic, minced
- 1 Tbsp. lemon juice
- 1/2 tsp. cayenne
- 1 1/2 Tbsp. olive oil
- 1 tsp. parsley
- 1 Tbsp. capers
- 1/4 cup kalamata olives, pitted
Day of Cooking:
- 1/2 cup baby tomatoes for day of cooking (optional)
Assembly instructions:
- Place all ingredients in a large resealable freezer bag.
- Squish gently to combine.
- Remove excess air.
- Seal and freeze.

Cooking instructions:
- Thaw.
- Spread in a single layer on a parchment paper-lined baking sheet.
- If desired, add 1/2 cup baby tomatoes.
- Bake at 400° for 10-12 minutes until it flakes easily with a fork.

How to Serve this Dish
On the day of cooking, you can pair this fish with some other Mediterranean flavors like lemon herb couscous or quinoa, brown rice pilaf, or lemon potatoes. You can also include flat bread or pita bread along with hummus or tzatziki sauce.

How Do I Know if the Fish is Cooked?
You’ll know when the fish is cooked completely when it is opaque in color and flakes easily with a fork. You can also check the temperature with a food thermometer. When it reaches an internal temperature of 145 degrees Fahrenheit or 63 degrees Celsius, you know it is done.
To keep the fish from drying out in the oven, cover it loosely with foil to help retain the moisture. Let it rest 1-2 minutes after taking it out of the oven to finish cooking and retain the juices from cooking.
