Hot Honey Chickpeas

A delicious and nutritious alternative to the classic chicken dish of the same name, these Hot Honey Chickpeas are so satisfying your family will fall in love. Ready in just ten minutes or less, this simple vegetarian dish packs a big flavor punch and is very affordable at the same time.

Hot Honey Chickpeas Recipe

Ingredients

  • 19 oz. chickpeas, drained
  • 1/4 cup shredded carrots
  • 3 cloves garlic, minced
  • 1/4 cup honey, melted
  • 2 Tbsp. Sriracha
  • salt and pepper
  • 1/4 tsp. cayenne pepper

How to Make Hot Honey Chickpeas

Assembly Instructions

  1. Place all ingredients in a large resealable freezer bag.
  2. Remove excess air, seal, and freeze.

Cooking instructions

  1. Thaw overnight in the fridge.
  2. Heat in a skillet over medium-high heat for 5-10 minutes.
  3. Serve over rice. If you want, you can sprinkle with cilantro and drizzle with a bit of Ranch dressing.

Can I use dry garbanzo beans?

Garbanzo beans (also known as chickpeas) are the right ingredient for this task, but our recipe calls for hydrated and cooked beans. If you have dry beans, you will need to soak and boil them first, then make the recipe as described. So the short answer is yes, but not without losing all of the convenience of the recipe prep.

What is Sriracha?

A Thai sauce made from ground chili paste and seasoning, this spicy hot sauce has a bit of tanginess and brings both flavor and heat to this dish.

How do I know when the chickpeas are cooked?

Since the canned beans have already been boiled, you just need to heat the skillet until everything is good and hot. Five to ten minutes is all you need! Unlike meat, specific temperature is not needed.

Instead of rice, serve your chickpeas over mashed cauliflower, cauliflower rice, or mashed potatoes.

If you aren’t a fan or ranch, you can use a variety of dressings to contrast the heat of the hot honey. Lemon Tahini, Tatziki, or Cilantro Lime dressings are all common choices.

You can substitute the honey with agave syrup as needed.

Increase or remove cayenne pepper to adjust the heat of the dish for your family preference. You can also add red pepper flakes, diced jalepenos, or ancho chili pepper to increase the heat to your liking.

Since we are talking about freezer meals, let’s talk about frozen rice! You can buy bags of frozen rice at the market in white, brown, or cauliflower varieties and have them on hand to make these weeknight meals as fast as microwaving rice as the skillet heats up. It’s a handy way to save time and bring the speed to match freezer meal cooking. While convenient and fast, this type of rice is not as delicious as properly cooked jasmine rice — but sometimes, sacrifices must be made.

How do I store Hot Honey Chickpeas

Leftover chickpeas will keep in the refrigerator in an airtight container for up to five days and reheated quickly and easily in the microwave or skillet. You can also freeze individual servings over rice to reheat in the microwave at work or school. Frozen leftovers will keep for three to six months.

What to Serve with Hot Honey Chickpeas

Serve this dish as your main protein and add sides such as salad, roasted veggies, fruit salad, or pita bread. Our frozen garlic bread would be a good choice as well, and is so nice to have on standby. My favorite way to shop is to purchase a couple of the different bagged salads available at the market each week to enjoy with our freezer meals. I’m also partial to roasted broccoli, which only takes 12 -15 minutes in the oven at 400ºF so it won’t slow you down too much.
