This creamy Ham and Potato Soup is a breeze to make using hash browns instead of diced potatoes. It’s the perfect, comforting, easy-to-make meal for a chilly day.

Ham And Potato Soup Recipe
Ingredients
- 5 cup hash browns, frozen, shredded
- 2 cup low sodium chicken broth
- 12 fl. oz. evaporated milk
- 8 oz. cream cheese
- 2 tsp. onion powder
- 1 Tbsp. chives chopped
- 8 oz. smoked ham, boneless, cubed
- 1 tsp. pepper
Day of Cooking:
- Optional: Cheddar Cheese, shredded
- Optional: Green onions or chives, sliced
Assembly instructions:
- Place all ingredients in a large resealable freezer bag. Remove excess air, seal, and freeze.

Cooking instructions:
- Thaw or partially thaw.
- Simmer for 15 minutes on the stovetop or cook on low in the slow cooker for 2-3 hours.
- If desired, top with shredded cheddar cheese and sliced green onions or chives.

Where this recipe really shines is that it is a great way to use leftover ham from your holiday meals. Simply cube it up and add it in and get this into the freezer so that you can fully enjoy it weeks from now when you’re not tired of ham anymore!
How to Serve Ham and Potato Soup
As we mentioned, you can top this soup with shredded cheddar cheese and sliced green onions or chopped chives. Other possible topping options include sour cream, bacon bits, or croutons.

Serve with a nice piece of crusty bread.
