Buffalo Chicken Cauliflower Casserole Recipe

Ingredients:

  • 2 cups chicken breasts, boneless, skinless, cooked and cubed
  • 1 head of cauliflower, chopped into ½-inch pieces
  • 1 tsp. salt
  • ½ cup Frank’s Red Hot sauce
  • 4 oz. cream cheese
  • ½ cup ranch dressing
  • ½ cup cheddar cheese, shredded
  • ½ cup mozzarella cheese, shredded
  • 4 oz. blue cheese, crumbled
  • 8 oz. water chestnuts, sliced, drained, and chopped

Assembly Instructions:

  • Add all ingredients to a freezer bag.
  • Remove the excess air, seal, and freeze.

Cooking Instructions:

  • Thaw.
  • Transfer to a casserole dish.
  • Bake, uncovered, at 400° for 45 minutes.

Ways to Adapt this Recipe

You can adjust the amount of spice in this dish by adding more or less hot sauce when you put your ingredients together in the freezer bag. You could also substitute chicken breasts with chicken thighs if you prefer. Additionally, you could also use your favorite frozen plant-based chicken breasts to have this be a vegetarian option.

To make this dish into single serve dinners, mix it together in a bowl when assembling and portion it into freezer safe, microwave safe trays or Souper Cubes before freezing. Then simply thaw and heat in the microwave for an easy meal.

Ways to Serve Buffalo Chicken Cauliflower Casserole

This dish can be paired with the traditional ranch, carrot sticks, and celery sticks, topped with extra blue cheese or ranch as desired.

For a more complete dinner meal, add a fresh garden salad with blue cheese dressing, coleslaw, dinner rolls or garlic bread, or mashed potatoes.
