I am a huge fan of having a variety of different chicken bites stocked in my freezer and ready to go. For one thing – chicken is cheap. Sometimes you can get boneless, skinless breasts for less than $2 per pound! For another thing, this simple white meat is kid-friendly even for picky eaters but can be made tasty enough to satisfy adults too. And finally, what could be easier? Stock your freezer during the summer months and holidays, and enjoy hot, fresh, delicious proteins at the snap of a finger all school-year long.

Be sure to try these Blackened Cajun Chicken Bites for completely different take with the same basic approach. I’m also pretty excited about these Greek Chicken Bites. What Can I do with Ranch Chicken?

The possibilities are endless! Once cooked, this tasty chicken can be served hot in a wrap, sandwich, quesadilla, taco, casserole, or pasta dish. Ranch chicken can also be chilled and added cold to salads or wraps or made into chicken salad with grapes and red onions.

Ranch Chicken Bites Recipe Ideas

To make a wrap — add whatever you want — lettuce, cheese, tomatoes, shredded carrots, shredded or thinly sliced radish, diced red or green pepper, and dressing.

If you want to make a quesadilla, melt butter in a skillet and add a tortilla. Add chicken, cheese, and any other ingredients you want (we like using sautéed onions and red pepper) and top with a second tortilla. Cook until the tortilla browns, and then flip it to brown and crisp up the other side. This works best with freshly cooked or heated chicken so that it already starts out warm.

To make a sandwich, layer a hoagie bun with hot chicken, provolone, tomatoes, seasonings, your favorite sandwich toppings, and your choice of sauce (mayonaisse, aioli, or dressing).

For a casserole, mix together cooked rice, cream of chicken soup, sour cream, chicken, and frozen peas and carrots in your baking dish. Bake for 25-30 minutes at 400ºF until hot and bubbly. During the last five minutes of baking, you can add French fried onions, slivered almonds, or crushed saltine crackers to the top for a nice crunch.

To make a pasta dish, cook the chicken with your veggies of choice — you could use red peppers, onions, yellow squash, zucchini, mushrooms, broccoli, etc. and while you are sautéing all of that you can also be boiling water for pasta. Drain the cooked pasta, combine it with your meat and veggies, and add your choice of sauce. Alfredo works really well with this seasoned ranch chicken, as does a simple butter and parmesan mix or a garlic lemon butter sauce.

How do I store Ranch Chicken Bites?

Save leftover ranch chicken in the refrigerator for up to two or three days in an airtight container. It can be served again either hot or cold – you decide! If reheated, it should be 165ºF when checked with an instant read thermometer.

What to Serve with Ranch Chicken Bites

Depending on how you choose to use your ranch chicken bites you can add all kinds of side dishes to round out your meal! Making wraps or sandwiches? Throw some fries or tator tots in the oven first. Fixing up some quesadillas? Add salsa, chips, and guacamole! Want to have a rice bowl with all the fixings? It’s a one pot meal and you are golden! If it’s convenience you want (and don’t we all?) be sure to pick up a bag of pre-made salad at the store and you have dinner in the bag. Just add chicken and serve.
