I can still remember the day I discovered lemon pepper. I was at my friend Holly’s house and she taught me to sprinkle lemon pepper on crackers and cheese. Oh my goodness. I fell in love. It’s an incredible flavor profile. These lemon pepper chicken bites dress up your chicken in a new way and make the perfect fast and easy meal.

Ingredients
- 3 chicken breasts raw, cubed
- 3 Tbsp. lemon juice
- 2 cloves garlic minced
- 2 tsp. lemon pepper
- 1 tsp. oregano
- 1/4 tsp. cayenne
- 2 tsp. olive oil
How to Cook Lemon Pepper Chicken Bites
Assembly Instructions
- Add all ingredients to a freezer bag.
- Remove excess air, seal, and freeze.

Cooking Instructions
- Thaw overnight in the fridge.
- Fry in a skillet until chicken is no longer pink inside.
- Use in chicken salad sandwiches, wrap, or rice and beans.

Will this recipe work with different meats?
Yes. You can use salmon or another fish. It will cook more quickly. You can also use chicken thighs instead of breasts.

How do I store Lemon Pepper Chicken Bites?
Cooked chicken must be refrigerated. Use an airtight container, and the chicken will keep for two or three days. Use a hot skillet and cook the leftover chicken to 165ºF to make sure it is safe. You could also throw the cooked chicken on a sheet pan with veggies to roast if you like.
What to Serve with Lemon Pepper Chicken Bites
At this stage of my life, I am loving the simplicity of a Kaiser roll sandwich and a side of raw veggies or fruit salad. Want to know what else would be really yummy? Asparagus. Roasted asparagus takes about 11 minutes in the oven at 400ºF. Toss it with some olive oil and lemon pepper for good measure. I might have mentioned this recipe before.
