We’ve been making this Cilantro Lime Chicken for quite a few years now. It’s such a pretty freezer meal in the bag. This makes it pretty satisfying once you’ve assembled it and can stand back and admire your work!

It may sound silly, but every time I make it, I always comment on how pretty it is. My theory is that if it’s pretty, it’s healthy. Color equals nutrition.
This is a freezer to Crockpot® meal. It’s easy and delicious. And of course, pretty and healthy too.
Cilantro Lime Chicken Recipe:
Ingredients:
- 3 large chicken breasts, boneless and skinless, cubed
- 2 Tbsp. olive oil
- 1 lime, juiced
- 1 cup cilantro, chopped
- 2 garlic cloves, minced
- 19 oz. can black beans, rinsed and drained
- 12 oz. can kernel corn, drained
- 1 purple onion, minced
- 1 tsp. chipotle spice
- dash salt and pepper
Assembly instructions:
- Cube the chicken and add it to a large resealable freezer bag.
- Add the olive oil, lime juice, cilantro, garlic cloves, drained black beans and corn, minced purple onions, and seasonings.
- Remove the excess air from the bag and seal. Freeze.

Isn’t that freezer bag pretty?!
Cooking instructions (Oven):
- Thaw.
- Bake in 350° oven for one hour.
- Serve on flour tortillas with salsa, sour cream, and guacamole.

Cooking instructions (Crock Pot):
- On the day of cooking, take out of the freezer to thaw.
- Dump the bag contents into a slow cooker. Cook on high for 4-5 hours.
- Serve on flour tortillas with salsa, sour cream, and guacamole.

What to serve with Cilantro Lime Chicken:
Since this dinner includes the protein and vegetables and is then served in flour tortillas (carb) with sour cream and salsa and guacamole, it is a complete meal. If you want, you can add some shredded cheese into your tortillas.

What to do with leftover Chicken mixture:
Store any leftover Cilantro Lime Chicken mixture in an airtight container in the fridge.
Recipe Variations:
Instead of serving the mixture on flour tortillas, sprinkle on tortilla chips with shredded cheese and bake to create delicious nachos.
Serve the cooked chicken filling on lettuce with shredded cheese for a delicious taco salad variation.
