Chorizo Sweet Potato Skillet

If you love chorizo as much as my family does, this dish will be a big hit. Ready in just ten minutes, Chorizo Sweet Potato Skillet combines sweet and heat to bring you a delicious and cohesive one dish meal. Chorizo Sweet Potato Skillet Recipe

Ingredients

  • 1 lb. chorizo sausage, cooked and sliced
  • 1 purple onion, diced
  • 1 green pepper, diced
  • 1 red pepper, diced
  • 1 large sweet potato, peeled and diced (fairly small cubes)
  • 3 cloves garlic, minced
  • 1 tsp. cumin
  • 2 tsp. chili powder
  • red pepper flakes

How to Make Chorizo Sweet Potato Skillet

Assembly Instructions

  1. Add all ingredients to a large resealable freezer bag.
  2. Remove excess air, seal, and freeze.

Cooking Instructions

  1. Thaw overnight in the fridge.
  2. Heat oil in a large skillet on medium-high heat.
  3. Add bag contents.
  4. Stir.
  5. Cover and cook for 10 minutes, stirring occasionally until sweet potato has softened.

How can you tell when the skillet meal is ready?

Since the sausage was pre-cooked it just needs to be hot — preferably 165ºF if you have an instant read thermometer. The sweet potatoes should be softened enough to eat but not mushy. We find it takes about ten minutes in a covered skillet.

What if I can’t find chorizo in a tube sausage?

You could use any other tubed sausage links like this instead. Andouille sausage, apple sausage, smoked sausage, or jalepeno sausage are just a few of the options at my local supermarket. It’s also fine to use beef, pork, chicken or turkey sausages – your preference. If you have to use a substitute for chorizo you may find you want to bump up the heat in the recipe with additional cayenne or red pepper flakes.

Do I have to use purple onion?

No. Purple onion has a specific intensity of flavor from the same content that makes the skin red, which is missing from other onions. But other onions will work in a pinch. White or yellow onions will hold their shape longer. Sweet onions or Vidalia onions will get very soft but still add nice flavor.

Chorizo Sweet Potato Skillet Recipe Ideas

Carrots, butternut squash, or regular potatoes can be substituted for the sweet potato. Also, don’t forget the yams are just another name for sweet potatoes and are in the same family.

You might find this strange, but I’m gonna recommend adding sliced or diced apples to this dish in the Fall when apples are plentiful and fresh. They can be added on the day of cooking to your skillet and breath fresh life into the dish with a simple seasonal upgrade.

If you want to change things up, serve this meat and veggie combo over a bed of pasta with alfredo sauce. Amazing!

Getting a little caramelization on the sausage deepens and improves the flavor. If the sausage is getting overcooked before the sweet potato is ready, try moving all of the sweet potatoes to the bottom of the skillet where it gets direct contact with the heat, or stirring more frequently.

How do I store Chorizo Sweet Potato Skillet

Leftovers can be kept for three or four days in an airtight container if refrigerated. Reheat the dish in a skillet or microwave. The meat will get chewy in the microwave pretty quick, so watch it closely.

What to Serve with Chorizo Sweet Potato Skillet

This gorgeous sausage and potato blend is lovely served over rice, cauliflower rice, or on its own. You can add a crusty French bread or sourdough loaf to the meal if you want extra carbs and a nice salad if you want to add green veggies. Or, you can just serve it by itself and count meat and veggies for the win.
