This Chicken Sausage and Vegetable Sheet Pan meal is fresh, easy to make, and always a hit at the family dinner table. With light seasonings, and packed with vegetables like zucchini, cauliflower, mushrooms, onion, and bell peppers, this meal is sure to become a go-to in your household.

We purposefully keep the seasonings in this sheet pan meal simple (just salt, pepper, and oregano). That way, it becomes a choose your own adventure meal. Chicken Sausage and Vegetable Sheet Pan
Ingredients:
- 6 chicken sausages, sliced
- 1 cup mushrooms, quartered
- 1 red bell pepper, coarsely chopped
- 1 yellow bell pepper, coarsely chopped
- ½ head cauliflower, cut into 1-inch florets
- ½ onion, coarsely chopped
- 1 medium zucchini, coarsely chopped
- 2 Tbsp. olive oil
- salt
- pepper
- 1 tsp. oregano
For day of cooking:
- 5 baby potatoes, quartered
Assembly instructions:
- Place all ingredients except potatoes in a large freezer bag. Shake to coat evenly. Remove excess air, seal and freeze.

Cooking instructions:
- Thaw. Spread ingredients out evenly on a parchment paper lined baking sheet. Bake at 375° for 40-50 min, until the vegetables are cooked.

Chicken Sausage and Vegetable Sheet Pan Suggestions:
- Consistent cooking: Chicken sausage slices should be about 1 inch thick. And, by keeping the vegetable chunks a similar size, you’ll have a consistently cooked sheet pan of goodness.
- Veggie swaps: Chicken dumps are as versatile it gets. If you prefer/happen to have other vegetables on hand like asparagus, brussels sprouts, broccoli, or even green beans, simply mix and match as you see fit.
- Spice up the seasonings: If you’d prefer to bring in other flavours to this dish, we’d recommend basil, parsley, thyme, or even rosemary. These herbs take the dish to a new level without taking away from its freshness and simplicity.
- Get a little saucy: Chicken bake sheet pan meals often pair nicely with a variety of sauces. Some of our favourites: BBQ sauce, tzatziki, chipotle mayo, honey mustard, or a touch of hot sauce.
- Meat alternatives: If beef or pork sausage are more up your alley, they work well in this recipe as well.
- Storing leftovers: If you have extra after enjoying this meal, store in an airtight container in the fridge for 3-5 days or the freezer for up to 3 months.
