Chicken Asparagus Sheet Pan

This incredibly fast freezer meal hits all the right notes when you dump it on a sheet pan, spread it out, add tomatoes, and enjoy dinner twenty-five minutes later. We have so many recipe options in our Freezer Meal 101 Club, it is hard for me to remember having to make a decision about dinner at the last minute. Instead, we pull the next night’s meal out of the freezer each evening before bed and place it in the refrigerator.

Chicken Asparagus Sheet Pan Recipe

Ingredients for the Freezer Meal Bag

  • 10 chicken thighs, boneless, skinless
  • 2 tsp. olive oil
  • salt to taste
  • pepper to taste
  • 8 oz. asparagus, fresh or frozen and cut in one inch pieces
  • 6 shallots quartered
  • 2 clove garlic minced
  • 1/2 tsp. thyme
  • 1/2 cup white wine
  • 1 Tbsp. Dijon mustard
  • 1 cup mixed olives, pitted
  • 1 large (gallon) freezer bag or reusable silicone bag

Ingredients for the Day of Cooking

  • 1 cup grape or baby tomatoes

How to Make Chicken Asparagus Sheet Pan Meal

Assembly Instructions

  1. Add all ingredients except baby tomatoes to a large freezer meal bag.
  2. Squish to combine.
  3. Remove excess air, seal & freeze.

Cooking Instructions

  1. Thaw the bag in your refrigerator the night before you want to make this meal.
  2. Dump the bag contents onto a baking sheet lined with parchment paper.
  3. Add one cup of baby tomatoes to the tray and stir to combine.
  4. Bake at 400°F for 25 minutes.
  5. Optional: broil for a few minutes at the end to give some color and caramelization.

How do you prepare a sheet pan for a sheet pan recipe?

I like to use parchment paper pre-cut to the size of my baking sheets for super easy cleanup. If you don’t have that, you can line the pan with aluminum foil or just give it a good spray with non-stick cooking spray.

Which parts of the asparagus do I use for Chicken Asparagus Sheet Pan?

The bumpy end is the best part, and you can continue cutting one-inch pieces until the stalk gets thick and tough. The ends that are turning white should definitely not be used.

How do I choose the best asparagus at the market?

The thinner the asparagus, the better. As the stalks thicken, they get tough and chewy. Perfect asparagus is easiest to find in early Spring and Summer. Look for a green color, no brown or mushy parts, and minimal to no whitening at the cut end of the stalk.

Can I use onions instead of shallots?

Shallots are a specific type of onion with a distinctive flavor. If you don’t have shallots at the market, you can use pearl onions (very similar), sweet onion, red onion, or white onion, but if you can find shallots, they add something to the dish and are easy to prepare.

Trade up the asparagus for green beans. Trim off the ends and slice the fresh green beans in one or two-inch slices. The cooking time will not change.

Add capers for a salty touch that marries well with the other flavors. Drain the capers in the jar.

Squirt a little fresh lemon juice over your plate to brighten up the dish at the end.

Mushrooms, such as sliced shiitake mushrooms or white button mushrooms are a really nice addition to this meal. You can add them from your refrigerator at the time of cooking, or go ahead and add them to the freezer bag earlier in the process. Make sure to clean the mushrooms really well before slicing. Soaking fresh mushrooms in a bowl of water will release most of the dirt.

Recently, I’ve noticed that you really need to check even the boneless, skinless chicken thighs for small bone pieces that don’t get removed from the bumpy side of the thigh. I find at least one in nearly every package. A good practice is to spread out the thigh flat, and give it a quick rinse, then check for bones before adding it to your freezer bag. It’s also a good time to trim off excess fat.

How do I store Chicken Asparagus Sheet Pan Dinner

Keep leftovers in an airtight container in the refrigerator for up to three days. Reheat the meal in the microwave or a skillet. Use individual microwaveable containers to encourage your family to quickly and easily grab leftovers for work or school.

What to Serve with Chicken Asparagus Sheet Pan Dinner

Serve your dinner over a bed of basmatti or jasmine rice or with mashed potatoes. Add a side of crusty bread and a contrasting fresh salad for greens. It also works well with a simple risotto. In fact, this dish would be delicious over a plate of spaghetti or even served on its own without starch. It’s very versatile.
