Sheet pan dinners are one of the easiest ways to get dinner in the oven fast. Dump out the pre-prepared freezer meal bag and the oven takes care of the rest. Cajun Seasoning has a bold mixture of cayenne pepper, paprika, garlic and peppers, pairing perfectly with chicken and vegetables. The result is a nutritious, flavourful meal you’ll want to keep in your quick-meal rotation.

If this meal is part of your freezer meal prep, the chopping and seasoning are already done ahead of time, making cooking day even easier. Simply transfer everything to your lined sheet pan, and place into your preheated oven. I like to line my sheet pans with aluminum or parchment paper which makes clean up a breeze. Simply gather up the lining and toss it away – voila! Clean up is done.

Not only is this recipe quick and easy to prepare with minimal cleanup, but you can easily cook up extra chicken and vegetables so the leftovers are quickly converted into other meals for the week ahead. Tacos, burritos or lettuce wraps are an easy meal after the meat has been removed from the bone.

Cajun Chicken and Veggies Sheet Pan Dinner
Ingredients:
- 2 lb. chicken drumsticks
- 3 Tbsp. olive oil
- 2 Tbsp. cajun seasoning
- 1 red bell pepper, in large chunks
- 1 green bell pepper, in large chunks
- 1 purple onion, in large chunks
- 1 large (gallon) freezer bag or reusable silicone bag
For day of cooking:
- 2 lb. red baby potatoes, halved or quartered

Assembly Instructions:
- Place all ingredients except potatoes into a large freezer bag. Mix gently to combine. Remove the excess air, seal and freeze.
Cooking Instructions:
- Thaw. Place contents of large bag on a parchment paper lined sheet pan.
- Add 2 lb. red baby potatoes, halved or quartered, and stir.
- Bake at 350° for 50 minutes – 1 hour or until internal temperature of the chicken is 165° when checked with a meat thermometer.

Tips for Sheet Pan Cajun Chicken and Veggies:
- Chicken drumsticks allow your chicken to stay juicy and not dry out while baking. You can substitute the drumsticks with chicken thighs with excellent results. Chicken breast is an option, but remember that it tends to be dryer than the drumsticks or thighs.
- I used baby red potatoes, but you can substitute them for other types of potatoes cut into bite sized pieces, or omit them all together and increase the vegetables. Try to keep the vegetables about the same size so that they cook evenly.
- If I remember, I will pull out the sheet pans half way through the cooking time and just stir the ingredients in the juices that are forming in the pan. This just ensures that all the ingredients are staying moist and that the flavour is distributed evenly. But, I often forget this step and the meals still turn out great.

How to Serve:
This meal is complete on its own, but I like to serve it with dinner rolls.
