Place all ingredients except potatoes into a large freezer bag. Mix gently to combine. Remove the excess air, seal and freeze.
Thaw. Place contents of large bag on a parchment paper lined sheet pan. Add 2 lb. red baby potatoes, halved or quartered, and stir.
Bake at 350° for 50 minutes - 1 hour or until internal temperature of the chicken is 165° when checked with a meat thermometer.
