BBQ Pork Chops

I am a huge fan of dressing up convenience products like bbq sauce instead of buying all of the ingredients to make my own from scratch. Don’t get me wrong, I love to cook from scratch, but bbq sauce is one of those things that is cheaper to buy pre-made than to make on your own unless you want copious amounts of it. And adding a few key ingredients takes it from okay to amazing! You’ll love our recipe for Freezer Meal BBQ Pork Chops, and you’ll also love the time it takes to go from fridge to dinner table with this meal.

The top half of this image shows the pork chops in a freezer bag with the sauce. The bottom half shows the plated pork with potatoes and salad in the background. The text reads Freezer Meal BBQ Pork Chops.

All the prep for this recipe happens on a weekend. Put it all in a bag, and get it in the freezer because when you meal prep consistently, you are playing the long game. It’s brilliant! We dress up the bbq sauce with brown sugar, lemon, and a little chili powder to bump up the flavor, and away we go. So easy! Try a variety of different sauces just to keep things interesting and maybe find a new favorite or two.

If you want more marinade recipes for your freezer, we’ve got them in spades over in our Freezer Meal 101 Club. Even if you used nothing else, the marinades would make the club worth your cost – but you really should try the One Pot Creamy Sausage Gnocchi if you need more convincing. So good!

  1. Thaw in the fridge overnight.
  2. Heat the BBQ (grill) to 400°F.
  3. Place pork chops on the hottest part of the grill and sear for 2-3 minutes per side.
  4. Move off the hottest part and cook until the internal temperature reaches 145° when checked with a meat thermometer.
  5. Let rest 3 minutes before serving.

I don’t have a grill. How else can these be cooked?

You can bake porkchops for about fifteen minutes at 400°F or even cook them in your air fryer. Just make sure they reach 145ºF before you take them out to rest. I highly recommend an instant-read thermometer for this purpose. Makes it so easy to get your meat just right.

BBQ Pork Chops Recipe Ideas

Make it hot. If you think this recipe needs a bump in heat, you can control that by getting a spicy bbq sauce or by adding red pepper flakes to your marinade.

Use the same marinade with chicken thighs or breasts. For these meats, the internal temperature should be closer to 160ºF before you remove them from the grill.

Add your favorite herbs to the BBQ pork. Rosemary, thyme, or marjoram would all be lovely.

Freezer meal cooking has been a game-changer for our family. You can use disposable freezer-quality plastic bags or purchase reusable gallon-size bags to use instead.

Use the leftovers on a sandwich with more bbq sauce, provolone cheese, and fried onions. Sliced pork pieces can be reheated quickly in the skillet. Make sure your leftover meat is reheated to 165ºF for food safety.

How do I store leftover BBQ Pork Chops?

Definitely refrigerate or freeze the leftovers in airtight containers. You can make reheating easier if you go ahead and slice the pork before storing it. Then it can be thrown in a skillet with butter or reheated gently in the microwave, and either way, it’s so fast!

What to Serve with BBQ Pork Chops

We show the pork served with boiled new potatoes and a bagged salad, but you could go so many different directions with this.

Try some of the new steamer bags of veggies from the freezer section at your grocery store – they have so many different options now and they cook in just a few minutes in the microwave. The key is to make sure whatever side dish you decide to make can be readied in the same amount of time the pork takes to grill (10-14 minutes). Another one of our favorites is grilled potato packets. Put diced potatoes in a foil packet with salt, pepper, and butter. Seal it up and throw it on the grill with your pork. Leave the potatoes on while the pork rests and you mix up a salad. The kitchen stays clean, and the results are delicious!
