This Bahn Mi Meatball sandwich is a fun twist on a traditional Bahn Mi sandwich. Juicy meatballs are coated in a Thai sweet chili glaze and then layered with carrots, jalapeños, fresh herbs, and sriracha mayo on a toasted baguette for the perfect bite.

Bahn Mi Meatball Sandwiches Recipe
Ingredients:
- 1 lb. meatballs, frozen, pre-cooked
- 1/2 cup Thai sweet chili sauce
- 1/4 cup low-sodium teriyaki sauce
- 1 Tbsp. fish sauce
- 1 cup carrots, shredded
- 1/4 cup jalapeño pepper, thinly sliced
Day of Cooking:
- 1/4 cup cilantro, chopped
- 1/4 cup fresh mint, chopped
- Sriracha mayo
- baguette cut into 4 parts, lightly toasted
Assembly instructions:
- Add meatballs, chili sauce, teriyaki sauce, fish sauce, shredded carrots, and thinly sliced jalapenos to a large freezer bag.
- Squish around gently to mix.
- Remove excess air, seal, and freeze.

Cooking instructions:
- Thaw. Heat meatballs in a skillet until heated through.
- Cut baguettes into four sections and lightly toast.
- Spread with Sriracha mayo.
- Add the meatballs and top with fresh chopped cilantro and chopped mint.

How to Make Your Own Sriracha Mayo
You can make your own Sriracha Mayo by mixing 1/2 cup of mayonnaise with 2-3 Tbsp. of sriracha hot sauce, a tsp. of lemon juice, and a sprinkling of salt and pepper.
You can make it hotter with more sriracha if you like.
