Bahn Mi Meatball Sandwiches Recipe

Ingredients:

  • 1 lb. meatballs, frozen, pre-cooked
  • 1/2 cup Thai sweet chili sauce
  • 1/4 cup low-sodium teriyaki sauce
  • 1 Tbsp. fish sauce
  • 1 cup carrots, shredded
  • 1/4 cup jalapeño pepper, thinly sliced

Day of Cooking:

  • 1/4 cup cilantro, chopped
  • 1/4 cup fresh mint, chopped
  • Sriracha mayo 
  • baguette cut into 4 parts, lightly toasted

Assembly instructions:

  • Add meatballs, chili sauce, teriyaki sauce, fish sauce, shredded carrots, and thinly sliced jalapenos to a large freezer bag.
  • Squish around gently to mix.
  • Remove excess air, seal, and freeze.

Cooking instructions:

  • Thaw. Heat meatballs in a skillet until heated through.
  • Cut baguettes into four sections and lightly toast.
  • Spread with Sriracha mayo.
  • Add the meatballs and top with fresh chopped cilantro and chopped mint.

How to Make Your Own Sriracha Mayo

You can make your own Sriracha Mayo by mixing 1/2 cup of mayonnaise with 2-3 Tbsp. of sriracha hot sauce, a tsp. of lemon juice, and a sprinkling of salt and pepper.

You can make it hotter with more sriracha if you like.
