Thai Sweet Chili Chicken Skewers Recipe
Ingredients:
- bamboo skewers
- 3 boneless, skinless chicken breasts cubed into 1 inch pieces
- 1 cup Thai sweet chili sauce
- 1/4 cup pineapple juice
- 1/4 cup honey, melted
- optional: red pepper flakes
Assembly Instructions:
- Place the wooden skewers in water and allow them to soak for at least 30 minutes.
- After the skewers have soaked, carefully slide the chicken pieces onto the wooden sticks.
- Combine the Thai sweet chili sauce, pineapple juice, honey, and red pepper flakes together in a medium bowl. Reserve ¼ cup of the sauce in a medium freezer bag and seal.
- Brush the remaining sauce over the chicken.
- Transfer the chicken kabobs to a parchment paper lined baking sheet. Place the tray in the freezer and chill until frozen.
- When the chicken is frozen solid, transfer the kabobs to a foil tray or baking sheet. Cover the tray with foil and place the small bag of sauce on top. Freeze until ready to cook.
Cooking instructions:
- Allow the reserved sauce to thaw completely, then brush it over the top of the kabobs.
- To cook the kabobs from frozen, place the covered pan on the grill over medium high heat for around 15 minutes or roast the kabobs on a baking sheet coated with oil or nonstick cooking spray.
- To thaw the kabobs before cooking, transfer the frozen chicken to the refrigerator the night before you plan to cook them.
- Grill the thawed kabobs over medium high heat on the BBQ for 5 to 7 minutes on each side, flipping the skewers halfway through cooking or from frozen over medium-high heat, turning frequently, for a total of about 15 minutes.
- Or cook the thawed kabobs in the oven on a baking sheet coated in oil at 425 degrees for 12 to 15 minutes, flipping the chicken halfway through the cook time. (if frozen, roast the kabobs on a baking sheet sprayed with oil in a 400°F oven for 15 to 18 minutes)
How Do You Store Thai Sweet Chili Chicken Kabobs?
