Mediterranean Chicken Sheet Pan Dinner

Mediterranean Sheet Pan Chicken Recipe

Ingredients:

  • 8 to 10 chicken thighs, boneless and skinless
  • purple onions, cut into chunks
  • 1/2 cup Sundried Tomato and Oregano salad dressing
  • 2 cloves garlic, minced
  • 2 teaspoons Greek seasoning
  • 1 teaspoon dried or fresh mint
  • 1 tablespoon lemon juice
  • 2 tablespoons capers
  • 2 tablespoons pitted Kalamata olives

For day of cooking:

  • baby tomatoes
  • crumbled Feta cheese

Assembly Instructions:

  1. Place the chicken thighs in a large resealable freezer bag, along with the onion chunks, salad dressing, garlic, Greek seasoning, mint, lemon juice, capers, and olives. Squeeze the ingredients together in the bag to mix, then remove excess air and seal the bag.
  2. Place the bag in the freezer until you’re ready to cook your sheet pan dinner.

Cooking instructions:

  1. Transfer the sheet pan chicken ingredients to the refrigerator to thaw overnight.
  2. When you’re ready to bake, preheat the oven to 400 degrees.
  3. Dump the contents of the freezer bag onto a baking sheet lined with parchment paper.
  4. Add the tomatoes to the sheet pan and stir to mix all the ingredients together.
  5. Bake in the preheated oven for 25 minutes, then sprinkle the Feta cheese over the top. Return the pan to the oven and cook under the broiler for around two minutes to melt the cheese and crisp everything up.
