I love how, with just a few changes in spice, you can turn ground hamburger into a completely different meal than the one you served last week. Korean Ground Beef Rice Bowl Recipe
Ingredients
- 1 1/2 lb. ground beef, browned and cooled
- 4 cloves garlic, minced
- 1 1/2 Tbsp. ginger, minced. Nothing compares to using freshly minced ginger. In lieu of that, I recommend refrigerated minced ginger (squeezy tube ginger!) or ginger paste.
- 1/3 cup low-sodium soy sauce
- 1 1/2 Tbsp. honey
- 1 Tbsp. sesame oil
- red pepper flakes
How to Make a Korean Ground Beef Rice Bowl
Assembly Instructions
- Combine all ingredients in a large freezer bag and squish to combine.
- Remove excess air, seal and freeze.
Cooking Instructions
- Thaw overnight in the fridge. Because it is ground beef, you may also be able to just give it a couple of minutes in the microwave to thaw it in a pinch.
- Empty the contents of the bag into your skillet.
- Add 2 Tbsp. cornstarch and whisk into meal.
- Bring to a boil over medium-high,stirring constantly.
- Reduce to a simmer and cook for 10 minutes, stirring occasionally, until thickened.
- Serve over rice and sprinkle with sliced green onions.
What can I add so this dish feeds more people?
Our recipe currently has just 344 calories for each of the four people it serves. You can always cook two bags to easily feed eight people. You can also add veggies to add bulk and serve several different side dishes to fill everyone up.
What kind of meat is usually used for Korean Beef over rice?
Typically, this recipe would be made with shaved or thinly sliced skirt steak or flank steak. We switched it out for ground beef so that it would be cheaper, easier, and faster — but guess what? It’s just as tasty!
Can I freeze the leftovers?
No. Once the ground beef has been cooked, frozen, thawed, and cooked again, it cannot be frozen and thawed a second time for food safety reasons.
How can I increase the amount of sauce?
If you want more sauce, you can mix a cup of beef broth, a bit of brown sugar, and a teaspoon of cornstarch, whisk together, and add it to the skillet. A dash of rice wine would extend the sauce as well. If you need easy, you can always add store-bought Korean BBQ sauce on the day of cooking.

You can add easy veggies on the day of cooking, such as carrot shreds, frozen peas, diced zucchini or yellow squash, sliced mushrooms, fresh green beans, diced red peppers, broccoli, or a shredded cabbage blend. You could also add sliced or diced pears and they would fit the flavor profile nicely.
While we love to serve this over rice, you could also serve it over a salad mix, on a baked potato, on cauliflower rice, on a lettuce leaf as a wrap, or over quinoa. It could even be served over rice noodles or spaghetti!
An over easy egg would be so yummy on this dish and add even more protein!
For crunch, you can add wonton crisps, slivered almonds, diced radishes, pickled daikon radishes, cucumber, toasted sesame seeds, sesame chips, or crispy rice noodles.
Make it even more spicy by adding more red pepper flakes or sriracha sauce.
How do I Store Leftover Korean Ground Beef Rice
Keep the leftovers in airtight containers in the refrigerator and reheat either on a skillet or in the microwave for fast and easy leftovers and on-your-own dinner nights. We call those OYO; maybe you have them, too? Generally, ground beef dishes can be kept for three to four days after they are cooked. Do not re-freeze this dish.
What to Serve with a Korean Ground Beef Rice Bowl
You can add vegetable spring rolls, wontons, or dumplings, all of which you may find in the freezer section of your local supermarket. You could also add kimchi, sesame Asian salad (bagged), or roasted veggies such as broccoli or green beans. A sesame flatbread would work nicely with this dish.
