Creamy Chorizo Pasta Sauce Recipe
Ingredients
- 1 lb. cooked chorizo sausage, sliced and halved
- 1 purple onion, thinly sliced
- 1/2 cup mushrooms, sliced
- 2 Tbsp. sundried tomatoes, sliced
- 1 Tbsp. lemon juice
- 2 tsp. madras curry paste
- 1/4 cup chicken broth
- 1/4 cup light poppy seed salad dressing
- 12 oz. evaporated milk
How to Make Creamy Chorizo Pasta Sauce
Assembly Instructions
- Place all ingredients in a large resealable freezer bag.
- Remove excess air, seal, and freeze.

Cooking Instructions
- Thaw in the fridge overnight.
- Bring to a low simmer in a skillet to heat through.
- Serve over long pasta noodles such as linguine or spaghetti.

What is madras curry?
This Indian spice blend is traditionally a very spicy blend of dried ground chili peppers and curry powder. The curry powder can be store bought or customized by the cook and the exact ingredients vary but may include tamarind, ginger, garlic, chili peppers of varying origin, black pepper, cinnamon, cloves, coriander, cumin, fennel seed, fenugreek, mustard seed, and turmeric.
What is evaporated milk?
As the name implies, evaporated milk is milk with some of the water removed. It is slightly thicker and more concentrated in flavor making it ideal for sauces. It is not the same as sweetened condensed milk which has added sugar and is more like a syrup. While milk doesn’t freeze and thaw well in recipes, evaporated milk does.
Creamy Chorizo Pasta Sauce Recipe Ideas
If you can’t find chorizo sausage in the casing, you can use ground chorizo, cooked before freezing in the bag. Don’t forget you can also find different varieties and heat levels of chorizo so pick the spice that will work best for your family. Technically, you could even use andouille sausage or smoked sausage for this recipe, although it will not have as much flavor or heat.
Any kind of pasta will work. If you think you might serve it with farfalle (bowtie) or rotini, you might want to dice the sausages in quarters instead of halves as shown.
Adding different veggies – diced peppers, squash, asparagus or green beans would be one way to change up this dish and add variety. This may change the cooking time or you may need to saute the veggies separately and then mix them in.
Change things up and serve the sauce over rice like a traditional curry!
Make it meat lovers. A combination of chorizo and chicken is always a nice take. They go together beautifully! This is a great way to extend the number of family members you can serve with a single freezer meal bag. Just add diced, cooked chicken on the day of cooking if more people show up for food time!

How do I store Creamy Chorizo Pasta Sauce
Leftovers can be kept for three or four days in the refrigerator in an airtight container and served over rice or pasta. You can also go ahead and make individual servings over pasta for the refrigerator or freezer and use them for lunches at work or school. A few minutes in the microwave will reheat the dish nicely!
What to Serve with Creamy Chorizo Pasta Sauce
Our frozen garlic bread pairs perfectly with this meal and is something I like to keep in the freezer at all times. A bagged salad from the grocery store is an easy way to add veggies and a fresh element to this meal. Roasted veggies take more time, but green veggies like broccoli, brussels sprouts or asparagus would all pair well. Depending on the time of year, an in-season fruit salad is always a nice contrast with rich pasta dishes like this one.
