There’s no reason to go out to dinner to enjoy a delicious plate of fajitas. That’s because it’s so easy to prepare this classic dinner at home! With the help of this simple shrimp fajitas recipe, you can put together a quick and easy dinner featuring tender shrimp and crunchy veggies ahead of time. Store the ingredients in the freezer until you’re ready to enjoy them, then pop the Mexican meal in your oven or air fryer to whip up this simple meal in minutes.

Shrimp Fajitas Recipe
Ingredients:
- 24 ounces frozen shrimp, de-tailed and deveined
- 1 onion, sliced
- 1 yellow pepper, sliced
- 1 red pepper, sliced
- 2 tablespoons lime juice
- 4 tablespoons fajita seasoning
- 1 tablespoon olive oil
For day of cooking:
- Flour tortillas
- optional toppings: fresh cilantro, thinly sliced purple onion, cojita or feta cheese, mango salsa
Assembly Instructions:
- Transfer the shrimp to a medium size freezer bag.
- Place the vegetables in a large resealable freezer bag.
- In a bowl, mix the lime juice, fajita seasoning, and olive oil.
- Pour half the marinade into the bag with the shrimp and the other half with the veggies.
- Remove excess air from each bag and seal both tightly. Staple the bags together above the seal and store in the freezer until you’re ready to serve your shrimp fajitas.
Sheet Pan Cooking instructions:
- Transfer both bags of fajita ingredients to the refrigerator to thaw overnight.
- To bake the shrimp fajitas in the oven, preheat the oven to 425 degrees.
- Line a baking sheet with foil. Pour the vegetables only onto the tray and cook for 10 minutes.
- Remove the pan from the oven and add the shrimp. Cook an additional 6-8 minutes, until the shrimp is cooked through.
Air Fryer Cooking Instructions:
- Transfer both bags of fajita ingredients to the refrigerator to thaw overnight.
- Line the air fryer basket with parchment paper and set to cook at 375 degrees. Place the vegetables in the basket and cook for 3 minutes.
- Stir to toss the vegetables, then add the shrimp to the basket. Cook another 6-7 minutes, stirring once.

And the good news is that it’s super easy to make your own fajita marinade at home. All you have to do is combine fajita seasoning, olive oil, and lime juice together. After that, just pour it over the fajita ingredients and let them soak in the seasoning for a few hours to add tons of flavor to your meal.
How Do You Know When Shrimp Are Cooked?
Whether you prepare this recipe in the oven or in your air fryer, you want to be sure your shrimp is cooked through before you serve it to your family. You’ll know when your shrimp are ready to eat when they appear pink with red tails. While cooked shrimp will have a little bit of white flesh on them, if yours are still mostly white when the cook time is up, you’ll need to keep cooking them for a few more minutes.
How Do You Make Shrimp Fajitas in a Skillet?
While preparing this recipe in the oven or air fryer is simple, the classic way to cook fajitas is in the skillet. So, if you want to cook more authentic shrimp fajitas for dinner, simply warm a skillet over medium heat and add the vegetables. Cook the peppers and onions for 5 to 10 minutes, until the have just begin to soften.
After that, add the shrimp to the pan and stir to mix. Continue cooking for an additional 5 minutes, until the shrimp begin to turn pink.
