When you combine a creamy sauce with tender chicken and flavorful mushrooms, you have an amazing meal perfect for a busy weeknight. Make weeknight dinner easier with this one pot mushroom chicken pasta. It’s unlikely you’ll have leftovers once your family digs in!We love one pot meals! One Pot Creamy Mushroom Chicken Pasta Recipe
Ingredients:
- 2 1/2 cups chicken, cooked and cubed
- 2 cups mushrooms, sliced
- 1 purple onion, thinly sliced
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1 teaspoon thyme
- 2 teaspoons paprika
- Salt and pepper to taste
- 1 cup Parmesan cheese, shredded
For day of serving:
- 4 cups chicken broth
- 500 grams bowtie pasta (or similar sized pasta)
- 1 cup fresh spinach
Assembly Instructions:
- Place the cooked, cubed chicken in a large resealable freezer bag, along with the sliced mushrooms, sliced red onion, minced garlic, heavy cream, thyme, paprika, salt, and pepper. Squeeze the ingredients together in the bag to mix, then remove excess air and seal the bag.
- Add the parmesan cheese to a medium sized freezer bag, remove excess air, and seal the bag. Staple the two bags together above the seal.
- Place the bags flat in the freezer until you’re ready to cook your Italian chicken pasta.
Cooking instructions:
- When you’re ready to start cooking, transfer the chicken and mushroom pasta ingredients to the refrigerator to thaw overnight.
- Pour the contents of the large freezer bag along with the chicken broth into a large pot or deep dish skillet.
- Cook over medium heat until the liquid begins to boil. Then, stir in the dry pasta. Continue cooking, stirring occasionally, until the pasta is cooked through.
- Add the parmesan cheese and spinach to the pot and stir to mix. Continue mixing until the cheese is melted and the spinach has begun to wilt.
